I think anyone who isn't part of the "Hollywood lifestyle" and stays there. There are people who can appear to be full of themselves but are actually really cool and don't make a big deal out of their fame, and there are people who you would think are nice because they play nice guys but are the polar opposite in real life.
I have friends that work on the sets and do production work (editing, set design) and I've gone to the studios to hang out. It's trippy. But a lot of shows are filmed in Canada or in towns across the country.
Actors have to make nice with locals if they're on location because they are interfering with everyday business. But I know with "Cat in the Hat" the antique shop owners in Pomona were very happy with the checks they got for the days their shops were closed down.
I think the crew keeps a lot of actors in check.. the underage ones are the worst because they're protected . Sometimes the parents are usually near by and start calling the shots of what's in the script. They try to keep the parents off set as much as possible.
Generally it's the people who either were famous young and roles dried up for a while and had to get a job, but in time wound up having a revived career, or someone who worked hard at it that by the time they were famous, they were grateful. And it does add value to a house if it was used in a movie.
I think that the worst ones are assistants and friends of celebs., as well as some of their personal security.

Jennifer Connelly.
I am very surprised how she, being so beautiful and talented, never appears in the media or sells herself as a mega star or the most beautiful girl on the scene. She has the guts to appear in a B movie, not even in a leading role, after amazing performances in other outstanding films.
There are other actors that I also find humble are: Ben Kingsley, William H. Macey, Joan Allen, Diane Lane.
And also Don Cheadle, as shanee h mentioned above!

Don Cheadle. For those who don't know who he is, he played in Hotel Rwanda, Crash, Rosewood, Devil in a Blue Dress, etc. He won a humanitarian of the year award for the work he's doing in Africa, but didn't want the recognition. He has a great, quiet, humble personality and what he does for other countries doesn't get plastered all over the news like Brad Pitt and Angelina Jolie.

There are no humble actors or actresses in Hollywood. how do you think they got there??? By stepping on a lot of people whether they meant to or not. They only get humble after they get successful.
