Yes we can eat Humboldt. There is a huge fishing industry off the coast of the Americas that harvests them. Unlike the giant squid and many other large squids the Humboldt does not use ammonia in order to achieve buoyancy. Therefore there is no problem eating them.

Yeah. The people in the Sea of Cortez fish for them by rubbing fish on barbed chains, then lowering them into the ocean until the Humbolts tangle their tentacles in them. It also seems to get them worked up, because Humbolts in fishing areas will attack anything that moves: divers, fish, even each other!
