I need help!
i am thorwing a party for 3 people this weekend
basically i have an idea

frozen crust sprinkled with shreads of chocolate then baked in a strip. then wrapped up like a pipe. inside of it have vanilla ice cream
on top, i am planning to pour alchohol soaked berries. Here is my question. What shoudl I use to add sweetness and a bit of tartness without overwhelming sharp taste? any ideas? and on a side of a plate I am planning to put maybe sliced peaches and sliced mango with contrasting taste of spicy alcoholol.



Any suggestions?

please read the question. I NEED to soak berries in ALCOHOL not just a juice.

Try

Barbados dark rum for peaches and mango
and
chocolate liquieor with berries.

I assume you mean frozen shortcrust pastry, and I assume you mean like a Swiss roll. If you use sour cherries they would be tart. You could add Kirsch, and some sugar, and maybe a bit of lemon juice. The problem you may encounter is that the crust will puff a bit during baking, so you will probably need to put some baking beans on top of it to prevent it from rising, and it will be quite difficult to roll it up without it breaking, so maybe you should only partially bake it so that you can roll it up with the ice cream. Smirnoff makes a vanilla vodka as well as blueberry, green apple, watermelon, and citrus. I think the vanilla would serve your purpose. Just mix 3 cups of the berries with 3 teaspoons vanialla vodka, 1 teaspoon vanilla extract, and 1 tablespoon sugar. Also, have you considered serving a mild dessert cheese on the side? try orange juice -- orange juice goes well with chocolate
