Hiding food, (eg. burying bones), is instinctive with dogs.
That it's under your pillow may be a sign of trust & affection.
Also practical. the dog may just want to be ready for a midnight snack.
Seriously, instinctive behaviors are hard to break.
It might be easier to restrict the snacks. if the dog is hungry, it's more likely to eat them when received

That's pretty cute :) My first dog would do that. And he'd mostly do it with stuff he stole. I was on this weekend trip with a friend and we had my dog with us. Got back to the motel room and were going to bed and the bag of home-baked muffins she'd brought was under my pillow with all these bite marks in it - completely flattened and covered with slobber. I think in that case it was more hiding the evidence than stashing it for later - which is exactly what your pup is doing!!!
Another reason might be that she thinks the jerky fairy's gonna come in the night and replace her little jerky treat with an entire cow!!

He's stashing it where he thinks it will be safe and protected until he comes to get it. My aunt's dog used to hide steak bones and stuff under my uncle's pillow all the time, I guess because she figured he'd protect it for her.

Its simply because the dog has no where to bury it. It is a natural instict - trying to save it for later by hiding it.

sometimes dogs like to burrow their food somewhere. Some dogs are possesive about their food and toys. you know how dogs like to bury bone in the backyard. hiding their food somewhere makes sure no other dogs steals their food

Our cocker did this for years, but only under mine, not the boys or their dads, she wasn't allowed on the bed but she managed to hop up when no one was around and leave her bone or treat. I think she knew it would be safe or............who knows.

as your dog regards you as * the leader of your pack * she/he is giving you the food as a gift.... mine do it often , dont worry about it .. its a compliment really...... and food put by for hard times lol
