i need easy vegtable recipes that are easy to make in at least 20 min i am having party with vegitarians and i have nothing to make they are expecting good food from me because they are all my friends from france please i need them badly

Below are links to great Vegan and Vegetarian recipes from sparkrecipes.com (a website of sparkpeople.com).

If you're looking for snack type foods, I like to cut up fresh vegetables (red bell pepper, cucumbers, carrots...etc...) and (if you're friends aren't vegan, just vegetarian, and will eat dairy products...) add 1 packet of ranch dressing/dip mix and add it to 16 ounces of fat free/lowfat plain yogurt. Mix well, and refridgerate at least one hour or overnight. Also, a spinach/artichoke dip is good (for the recipe below, I substitute fat free plain yogurt for the mayo) Or, if they are vegan, find a recipe or a bottle of a vinegar dressing (I like Ken's Steak House Lite Raspberry Pomegranite Vinaigrette)

Meal type foods: Vegetable Kabobs (oven or grill), Portabella "burgers" [instead of meat, use the mushrooms... you don't need the bun if they are vegan, just season with garlic, pepper, and any other spices you enjoy (italian seasonings, spicy seasonings, rosemary and thyme... whatever you and your guests like.) Cook in Skillet.] ...you can make smaller version of the kabobs for party type foods, and cut the mushrooms into 1"x1" pieces and put on mini buns or stick with toothpicks...skillet veggie quesadillas are also good for a party. A pasta salad or heartier dish may be good also.

Desserts: Chocolate Tofu Pie (I use unsweet cocoa powder and splenda instead of semi-sweet chocolate chips ...I use maybe 1/4c cocoa powder and 1/2 cup splenda for baking... but taste after you blend, and add more of each to taste if needed.) ...there are lots of dessert recipes in the vegan and vegetarian links below.

Drinks: ...you can serve water, fruit flavored teas, soda... but for something fun, I like to blend or juice watermelon and canteloupe (and any other fruit you like)... refridgerate overnight, then add either some gingerale, sprite, or seven-up. If you don't want to deal with watermelon and canteloupe, you can buy some fruit juice (I like V Fusion Pomegranate Blueberry or Peach Mango) and add the gingerale. You can also grate 1/2 of a canteloupe and refridgerate overnight in 2 quarts of water (grate the whole canteloupe and put in 4 quarts of water.)

If you like spicier things, you can stuff some pablano pepper halves (cut stem off, cut in half, clean out seeds)...stuff the peppers with black beans, red bell pepper, green bell pepper, onion, corn...and any other veggies you think would be good...(I like to warm the filling in a skillet, and roast the peppers in the oven for 3-5 minutes while the filling is warming) Spoon the mixture into the pepper halves, top with imitation cheese (or real cheese if they eat it) and bake in the oven (350 F) for another 25 minutes, check and if not done, cook for an additional 10 minutes (if they're still not done, check them every five minutes...seems crazy, but they burn so quickly!) ... you can also use mini bell peppers or regular bell peppers if you don't want the spicy-ness.

MISSOURI CASSEROLE

8-oz. sour cream
I can mushroom soup
1 pkg. Lipton Onion Soup Mix
I can sliced water chestnuts

I pkg frozen broccoli (I use fresh and partially steam the florets)
1 pkg frozen. lima beans mostly thawed

Add first four ingredient to vegetables
Top with 3/4 stick of margerine, melted
and 3 cups of Rice Krispies
(I usually mix above 2 in bowl first then top casserole)

Put into 9 x 13 pan, Pyrex or T-fal

Bake @ 350, for 30 minutes

So easy and people say it is so tasty
If vegetarians don't use sour cream, use plain yoghurt

Roasted veggies????

Parboil some new potatoes, throw them into hot oil in an open dish along with any other veg you fancy and roast for about 20 minutes. Add some rosemary or whatever herbs you like. Ideally you can marinate the other veg (I use mushrooms, tomatoes, onions, parsnips, celery) in a little oil with herbs for half an hour before cooking.

Keep in mind that vegetarians don't just eat vegatables. You can have a variety of foods...there's much more to eat in this world than meat. Maybe you can make a vegetarian pasta dish like penne pasta with tomato, basil, and olive oil. It will have plenty of flavor and still be enjoyable to eat. Make a pizza if they aren't vegan. You could make a portabello mushroom sandwich. There's lots you could do. You just gotta be creative.

Vegetarians and Vegans don't just eat vegetables. LOL! They also eat pasta, fruits, and breads. Vegans have a more restricted diet than vegetarians, but there are still plenty of options.

What about mixed vegetable enchiladas? Or grilled bean burgers? Or, make angel hair patties and then top them with a really good pasta sauce?

This is very unique for parties and vegetarians. I love this on white bread only and be sure to cut the brown edges off. Peel your cucumbers good! Slice them across, not to thin! Spread mayonaise onto your bread and lay your cucumbers over the mayonaise,salt and pepper it and put a slice of bread on top and cut the sandwich in fourths. HA! So tasty and good.

I would suggest you plan to have a vegetarian meal...
perhaps spagetti with veggie sauce then you can fry/bake/broil some boneless chicken thighs for those who care to have meat on the side
If you're having light summer supper do a large bowl of salad greens. Then put out bowls of sliced carrots, snow peas, cauliflower, tomatoes, all sorts of salad fixings things to add including some of those chicken thighs.
It strikes me as kind of rude to serve vegetarian guests just salad and side dishes and no main dish.

Roasted asparagas.
One lb asparagas (tough parts removed)
Lay flat on a cookie sheet, drizzle with olive oil and dust over with parmesan.
Bake at 450 degrees for about 10 minutes, add more parmesan and bake another five.

1. Caesar salad with homemade dressing and freshly grated parmesan.
2. Artichoke and Green Chili Quiche: 1 prepared pie shell, 3 eggs, beaten with 1 1/2 cups half and half, 2 cups shredded white cheddar cheese, 1 can diced green chilis, 1 can artichoke hearts, drained and chopped. Place artichoke hearts and green chilis in pie shell (mix first). Top with cheese and pour egg mixture over the top. Bake until golden brown at 375 degrees for about 50 minutes. Serve with a baby lettuce salad with sliced radishes and a dijon vinegrette.
3. Baked Brie En Croute: take a wheel of your favorite brie and place it on a defrosted and rolled puff pastry. Top with caramel sauce and chopped pecans. Fold the edges of the pastry up and over the top and secure with bakers twine. Cut "leaves" from the overlapping flaps and brush with an egg wash of 1 egg plus 1/2 cup water. Bake at 400 degrees until pastry is puffed and golden. Transfer to serving dish and serve with your favorite crackers.
4. Fresh veges, steamed crisp tender, with a garlic and olive oil dipping sauce (this usually calls for anchovies, and if they eat fish, you can purchase anchovy paste to add to your emulsion....it tastes great!)
5. Macaroni and cheese with gorgonzola, cream cheese, cheddar, and fontina. Add some dijon mustard and a dash of hot sauce to your cheese sauce, toss with cooked pasta, and top with grated cheese and bread crumbs before baking at 350 degrees for 45 minutes.

try using vegetarian meat...
but if not
put some chopped up potatoes on a piece of heavy duty tin foil in the shape of like a basket and put some vegetables of your choice in with the potatoes and add salt and butter and maybe a hint of italian dressing, then cook it on the grill in the yin foil basket...
I'd try making it before so you can make sure it tastes fine
