No, you cannot get rid of the salt by evaporation, if you evaporate the liquid the salt stays behind.
The only way I know to rescue a soup or gravy that is too salty is to add more water until the salt content is right and adjust the other ingredients accordingly.
Sorry, there IS another way, tip the stuff out and start again. lol

I've never heard of the potato solution, and I'm a little skeptical because of the starch in potato might affect the salty liquid. If you're not too far into the production of whatever you're making, a good idea is to rebalance the ingredients, by adding more of the rest, like water, vegetables, meat, etc. Think of salt as the weights on a balance, and the rest of the ingredients on the other side as the stuff that's balancing it out. If you make something too salty, you're going to have to increase the rest.
If you're really serious about making a quality product, I'd start over again and to season in layers. Too much seasoning is hard to get around, so just be careful when seasoning.

You can add a potato or squeeze a lime in the liquid to remove some of the excess salt. I have also added more veggies to whatever I was making this way, the salt decreases because it is absorbed by the newly added veggies.

In addition of placing white potatoes in the dish. Depending on what it is you are cooking, you can pour of some of the liquid and add fresh liquid. Don't worry your food will still have some seasoning in it because you over salt it. Also, a teaspoon of sugar is great as well.

If you go the evaporation route you will make the salt concentration stronger. Try adding some sugar to counter the salt.

Put a raw, peeled potato in it ans simmer on low heat for awhile. It will absorb some of the salt.

Waste not want not! Feed it to your closest family member. Then fix a new batch for yourself. It works if you stand over them with a rolling pin or cast iron skillet.
