Could someone explain the differences in steak cuts or steaks such as: New York Strip, ribeye, sirloin, prime rib, and other cuts etc.

Which are better cuts?

different cuts come from different parts of the cow. the less a muscle is used, the more tender it is. filet minon is the most tender because it comes from near the spine and is never used. where it comes from also determins how much fat is in it. the more fat, usually the tastier. like ribeye, it has lots of fat marbeling and is very tasty. there are also grades of meat. prime, choice, select, and on down.

the tenderness of the meat. if you get a cut that has lots of marbeling (fat) the more tender it will be. if you get a cut that is more lean, it will not be as tender. the more tender cuts of meat usually comes from places on the animal that doesn't have a lot of muscle movement on their bodies.

rib eyes (my favorite)
prime rib
filet mignon
new york strip
t-bone and porter house
are all good cuts of meat..tender and they usually cost a lot of money.
