Here ya go, these are safer than frying them and really just as good, enjoy!!

OVEN FRENCH FRIES

1 tbsp. oil

Preheat oven to 475 degrees. Peel potatoes and cut into long strips about 1/2 inch wide. Dry strips thoroughly on paper towels. Toss in a bowl with oil as if making a salad. When strips are thoroughly coated with the oil, spread them in a single layer on a cookie sheet and place in preheated oven for 35 minutes.
Turn strips periodically to brown on all sides. If a crispier, browner potato is desired, run under broiler for a minute or two. Sprinkle with salt before serving.

Makes 6 servings.

You have some good french fry recipes, here's my famous mashed potato recipe:

3 medium russet potatoes
3 small-medium red potatoes
3 tablespoons of butter
1 tablespoon (or so, depends on how much you like it, this is a normal amount) of minced rosemary
1/3 cup milk (or so)
salt & pepper

Peel the russet potatoes and leave the skin on the red ones. Cut them up in equal size pieces as much as you can, and put them in water in a sauce pan, put about 2 teaspoons of salt in the water, and put that over high heat until it comes to a boil. Then lower the heat and keep at a simmer. Stir every 3-5 minutes, until you can pierce one with a fork with little effort and it slides right off. Then drain the water. Add the milk, butter, rosemary, salt and pepper, and mash with a potato masher until it's the consistency you want. I like lumps, but some people don't. If it looks too dry, add more milk. Just remember you can always add milk, but you can't take it out! Also, potatoes need lots of salt, so taste and add as desired.

Easiest would be to bake in microwave and top with chili and cheese (yummy) - french fries require a lot of oil and are tricky for a first timer so I recommend Shake and Bake fries:
1/4 cup grated Parmesan cheese
1 tablespoon olive or vegetable oil
1 tablespoon dried basil
1/4 teaspoon garlic powder
4 medium red potatoes
DIRECTIONS
In a bowl, combine Parmesan cheese, oil, basil and garlic powder.
Cut potatoes into 1/4-in. sticks. Add to cheese mixture; toss to coat. Place in a 15-in. x 10-in. x 1-in. baking pan coated with nonstick cooking spray.
Bake at 425 degrees for 15 minutes; turn potatoes. Bake 15-20 minutes longer or until crisp and tender.

the beauty of this recipe is it is easily modified if you don't want parm and basil use feta and oregano or garlic and parsley it is a since and clean up is much easier than with a deep fryer.

You can also make grill cheese sandwich with a salad on the side or a soup and salad - you could even make your own potato soup - just boil 2 potatoes until soft drain and mash with butter salt and pepper add 1 can vegetable or chicken stock and some celery salt stir and if necessary reheat in microwave - yummy.

good luck!

First you'll need a deep fat frier and a strainer basket. Usually Wal-Mart has a product for below $25.00. Get some peanut oil, a 10 pound bag of potatoes, and salt. There's not much to tell. Heat the grease to 300 degrees and put in the sliced potatoes for about 7 minutes, remove with strainer. Let stand on a sheet of kraft paper to drain off the grease. For a better tasting fry soak the raw potatoes in salt water for 15 minutes prior to emersion in oil. Lots of warnings about hot grease. Water and grease don't mix etc. Good luck.

Wash, peel then cut potatoes to french fry shape. Then fry in a pre-heated skillet with enough oil to cover fry's. take out, drain and put in more potatoes. Let the batch you already fried cool then fry for a second time (thats what makes them crisp). Just keep repeating the process until your done.

ok...first answerer has the french fry thing down...other potato recipes.....

Baked Potatoes
Wash x number of potatoes, wrap in foil, cook in 350* oven for 2 hours. cut open, put in desired toppings. (butter, sour cream, chives, bacon, cheese)

Roast Potatoes
Cut potatoes into 2-bite size pieces, coat in olive oil and spices (ex. rosemary, sage, salt, pepper, garlic). Roast uncovered in 400* oven for 45 mins to an hour or untill tender inside

Grilled Potatoes
Slice potatoes into 1/4 inch slices, brush with olive oil, sprinkle with steak/grill seasoning, salt, maybe some red pepper for a kick. grill for 10 mins on each side--leaves nice grill marks, crisp outside, tender inside!
