Here's a recipe from one of my favorite cookbooks by the Food Network's Barefoot Contessa:
Chocolate-Dipped Strawberries
1/2 cup chocolate chips (Ghirardelli are supposed to be excellent for this)
3 tablespoons heavy cream
12 long-stemmed strawberries
Melt the chocolate and cream together in a bowl set over simmering water until just melted. Stir and remove from the heat. Dip each strawberry in the chocolate and set aside on waxed or parchment paper to dry.
Enjoy!

While people are right in saying that you can use regular chocolate to make chocolate covered strawberries, it really comes down to some technique with chocolate. After you melt chocolate over a double boiler, it doesn't really form back into hardened chocolate. What you're going to have to do, after you melt the chocolate in a double boiler (about 45 degrees celcius), is let it cool slightly to about 29 degrees celcius, and then seed the chocolate. Seeding the chocolate involves chopping some hard chocolate and mixing it into the melted chocolate, or agitating it to allow crystals to form in the chocolate and thus tempering it. This allows it to harden with the correct texture and sheen. After you've seeded chocolate, reheat to about 31 degrees celcius, and proceed dipping. Make sure your strawberries are dry, since water and chocolate don't mix. When you set up your double boiler, make sure you don't leave any holes in the saran wrap for steam to get into the chocolate. Have fun!

Any chocolate that hardens like bakers chocolate or a chocolate bar will work.
Just melt it and dip the strawberry then sit it on a flat surface to harden as it cools.
That's what you use in chocolate fondue's also for fruits.

i just use regular old chocolate chips. I think last christmas I used ghiradelli white and dark chocolate chips. melted them in microwave until proper consistency and the dipped the strawberries. They were gooey at first, but then set-up nicely.

In the baking section of the grocery store they have "sweet" chocolate bars for cooking. You can heat them up in the microwave or on a stove top. I have seen the kind that is liquid then hardens up but I can't believe that it is any good, and the chocolate bars are so easy to do. My roommate uses the brand "bakers"

I use Wiltons chocolate candy coating...you can find it in Michaels crafts store. I use the chocolate and the vanilla flavored. I find its easier to work with, it melts easy.
If you want to use chocolate chips, use milk chocolate chips and add 1 tbsp of vegetable shortening to maintain a smooth texture and so it doesnt "seize" up on you.
Place it in a double boiler.

Use can use good quality chocolate and melt it in a double boiler till melted and creamy. Or you can use these chocolate chips used for candy making. They can be found at Ben Franklins, Michaels or any other craft shop.

I know you have to use parrafin. Try looking at a craft store believe it not for the little candy forms, Wilton cake decorating supplies, etc. Good luck!
