Ive use cottage cheese myself.It tastes fine but you are supposed to use ricotta to have a more italian flavor.if you are pinched for funds cottage cheese is a fine short cut.. Just dont use it if youre trying to impress company.

Ricotta will add more flavor than cottage cheese. Ricotta is also a drier cheese, so your lasagne will be firmer than usual.
When I make lasagna with ricotta I will make the tomato sauce a little thinner to compensate for the moisture difference. You could also cover the ricotta lasagna loosely with foil when you start baking, then remove it for the last half hour or so. This would help keep more moisture in.

Lasagna with Ricotta - - Lasagne Con la Ricotta
INGREDIENTS:
* The Sauce:
* 2-4 tablespoons olive oil
* 1 medium onion, sliced
* 3 garlic cloves, sliced
* 1 1/2 pounds (600 g) ground beef
* 1/2 pound (225 g) mozzarella, sliced
* 1 pound (450 g) pork shoulder
* 1 pound (450 g) Lasagne noodles
* 1 large can tomato puree
* 1 (6-ounce) can tomato paste
* 1/2 cup water
* Salt and pepper
* 3 tablespoons sugar, optional
* 1 teaspoon baking soda, optional
* --
* The Ricotta Filling:
* 2 pounds (900 g) ricotta
* 1 tablespoon chopped parsley
* 1 cup Parmesan cheese
* Salt and pepper
Once you have assembled the ingredients, heat the oil in a pot, add the pork, season it with salt and pepper, and brown the meat thoroughly on all sides. Remove the meat to a platter, leaving the drippings in the pot. Add the onion, garlic, and ground beef, season the mixture with salt and pepper, and cook until the beef is well browned. Add the tomato puree, tomato paste, water, sugar, and baking soda. Stir and simmer for 5 minutes. Add the pork and continue simmering for an hour, or until the pork is fork-tender.
Next, see to the ricotta filling: Combine the ricotta with the cheese and the parsley, season the mixture to taste, and set it aside.
Boil the lasagna a few sheets at a time in lightly salted water until they are al dente, remove them with a strainer, and drain them; while they're cooking preheat your oven to 375 F (180 C). Coat the bottom of a baking dish with a half cup of sauce, put down a layer of pasta and a layer of ricotta, and continue alternating the pasta with sauce and ricotta. Cover the last layer of pasta with sauce and mozzarella slices. Serve the pork as a second course.
Comments: You can also make tiny meatballs, drop them in the sauce, and layer them in the lasagna.

Ricotta tents to have a different texture and flavor than cottage cheese. It all comes down to with you like better. If you are going to go with the ricotta and the recipe calls for cottage cheese, you should look online to see if there is a conversion, ie (this is not exact) 1 cup of cottage cheese = 1.2 cups of ricotta.

YES!!! Using Ricotta cheese makes lasagna so~ much tastier! My mom used to use cottage cheese, and I think it works in a pinch, but if you can, use ricotta. Just dont forget to add 1 egg for every 15+ ounces and mix together before putting the lasagna together.

Ricotta is more of a quality cheese compared to cottage, and will probably add a little more flavor. But cottage cheese is cheaper and the lasagna will still turn out good.

It's more of a texture thing than a flavor thing. Recently, I was making lasagna and discovered I was out of ricotta, and didn't want to drive to the store. I put some cottage cheese in a strainer to get most of the liquid out of it, then I ran it through the food processor to get rid of the texture.
It was an acceptable substitute.

I agree with Aj. Mix them together. What I don't like about Ricotta is that I think it tends to be too dry and does not melt the way cottage cheese does. What I don't like about Cottage Cheese is that it is not as flavorful. If you mix them together and add one egg, beaten, along with dried parsley flakes and a little salt, you will not believe how much better this is. Literally, you have the best of both worlds and extra flavor, to boot!!

well in my opinion all cheeses taste the same but ricotta does taste good it has a richer and more flavorful taste you can also try 3 cheese lasagna and put ricotta and cottage together i hope i comes out great
