I am a former chef and use them quite often, and they do not dry it out like the one repondant said, just soak them with a bit of warm water or milk, I do not recommend using eggs in burgers, if you do not cook them well you have 2 food bourne disease issues.

I use medium ground beef something with taste and flavour, oatmeal soaked in milk, and my seasonings fresh garlic, diced sauted onions, salt or a mixture we have here in Canada called Montreal Steak spice, paprika, onion powder and if you like spicey, chili flakes or a touch of cayenne or chili powder, adds zip. If it is just for me I put a dash of a steak sauce, here I use HP but in the US, A1 is fine. I make them 4-5 oz size and chill them for an hour before cooking on the grill, BBQ or even in a pan. I like mine medium well so that is why I don't use eggs in mine, but the moisture with the oats will make a juicy burger that holds together.

The old fashioned method of binding ground beef for hamburgers is the use of cracker crumbs. The cracker crumbs(meal) takes on the same texture as ground beef and helps retain the juices. You will not need to use anything else. It will give you some of the juiciest burgers you have ever had. Matzo cracker meal will also work.Oats work best with egg to bind baked groundmeat items.

No thats not really a good choice.
Usually people put egg yoke and a cup of breadcrumbs.

I've always crunched up saltine crackers and added them to the ground beef. The burgers get so juicy then.

i havent heard of oats, but i use bread crumbs and eggs and that works good
