There are a couple of things that I sometimes do with leftover salmon which also lends itself nicely to canned salmon, such as a salmon soufflé, or a salmon loaf. Canned salmon is very popular in a lot of southern cuisine, so you may have luck searching some of your favorite southern recipe cookbooks or websites.
In the meantime, salmon loaf is very easy to do. The nice thing is that you can also add certain other leftovers, such as cooked asparagus spears, etc., into the mix. If you are less keen on a baked loaf, simply take the mixture and form them into patties, then fry in butter on both sides until golden brown. I like to serve salmon loaf with garlic mashed potatoes, a green salad and nice glass of Pinot Noir.
1 can (16 oz.) canned salmon
2 cups soft bread crumbs
1/3 cup finely minced yellow onion
1/4 cup chopped green onion
1/4 cup milk
2 eggs
2 tablespoons minced parsley
1 tablespoon Dijon Mustard
1 tablespoon lemon juice
1/4 teaspoon each salt & dried dill weed
1 dash pepper
Drain salmon, reserving 2 tablespoons liquid; flake. Combine all ingredients including the 2 tablespoons of liquid. Place in a well-greased 8-1/2 x 4-1/4 x 2-1/2 inch loaf pan or shape into loaf on a greased baking sheet. Bake at 350 for 45 minutes.

Make salmon patties! My kids love them!
In a bowl pour in the can of salmon, but I try to take out the bones, and most of the really dark stuff.
A small onion, chopped fine.
One egg.
About four or five tablespoons of flour.
Four or five tablespoons of meal.
Mix together and then take and spoon some in your hand and roll you a ball then put in the pan with some oil and flatten!
Fry til golden brown.

well when you open it, if it has bones in them, clean the bones out by splitting the salmon and running your fingers over the bones, running water over them sometimes helps. its messy..yuk..i always buy boneless now adays...
break apart in a bowl, add 2 eggs, crackers, onions, whatever seasoning you like. mix together, add enough crackers to whenever you make a ball with the "dough" it sticks together. Roll the ball into flour and put in a well greased pan, flatten with a spatula cook until brown on one side, turn and cook other. .. you can use mackeral also.. just about has the same taste and cheaper too.

You can drain in put in a fresh salad.
You can make a fishcake style patty. (mix onions, mayo, parsley flakes)(bake or fry in olive oil)
