here sweetie this is how i make mine:
16oz. pkg. lasagna noodles
2 Tbsp. cooking oil
4 or 5 clove garlic
32oz. jar of spaghetti sauce
2 lb. grated monzzarella cheese
24. oz cottage cheese (optional)
1 lb. ground beef browned
salt and pepper to taste
Boil noodles as directed on package. Add oil to boiling water to keep noodles from sticking. Let cool about 10 minutes until easy to handle. Thinly chop garlic and add to spaghetti sauce. Spray large roasting pan (or 4_quart Nesco roaster) with vegetable cooking oil. Lay out 1 layer of noodles on the bottom of the pan and sprinkle in cheese, bits of hamburger and spoonfuls of cottage cheese. Add enough spaghetti sauce to cover most parts lightly. Repeat layers until out of ingredients. Top layer should end with sauce, meat and cheese over the noodles. Cover pan and bake at 350 degrees for 1 hour.

My father also did not like lasagna made with ricotta cheese, so my mom made it with Velveeta cheese instead.
NANA'S LASAGNA
1 box lasagna noodles
1-1/2 lb. ground beef
1 small chopped onion
1 egg
grated cheese
parsley
garlic powder
salt and pepper to taste
3/4 cup bread crumbs
2 jars ready made spaghetti sauce
Velveeta cheese, sliced
Cook noodles according to directions. Rinse under cold water and drain. In a bowl mix together the ground beef, chopped onion, egg, grated cheese, salt, pepper, parsley and garlic, to taste. Add bread crumbs and mix well. In a skillet, fry the mixture in a little hot oil until crumbly. In a large rectangular casserole dish, layer the sauce, noodles, meat mixture and cheese, starting with the sauce and repeating until you have used all the ingredients. (You may have some sauce left over.) Top with cheese. Cover the casserole with aluminum foil and bake at 350 F. about 30 minutes. Remove the foil and bake 10 minutes more until the cheese is melted. Checking to make sure the cheese does not burn. Cut into squares and serve with garlic bread and a tossed salad.

1 teaspoon dried leaf oregano, crumbled

9 1/2 cups ricotta cheese
2 cups shredded Monterey Jack cheese
3/4 cup grated Parmesan cheese
Cook lasagna noodles according to package directions; drain and set aside. In a large skillet, brown beef, onion, and mushrooms; drain well. Stir in spaghetti sauce, garlic powder, salt, oregano, and basil. In a 2-quart buttered baking dish (about 11x7x2-inches), layer 1/3 of the lasagna noodles, 1/3 of the sauce and 1/3 of the ricotta cheese, Monterey Jack cheese, and Parmesan cheeses. Repeat layers twice. Bake lasagna for 30 minutes, or until thoroughly heated and bubbly. If you want sprinkle a little ricotta cheese on top to add luster. Let stand for 8 to 10 minutes before cutting and serving. Serves 6 to 8.

Instead of ricotta cheese, use 8oz of cream cheese, 1/4c sour cream, 1/4c parmesan cheese and 1 egg. Blend it all together and add it to your existing lasagna recipe. Trust me, it makes all the difference.

You could turn a traditional dish into something a little different. Try a meat lasgna:
MEAT LASAGNA
10 lasagna noodles
1 1/2 lbs. ground beef
1 (32 oz.) jar marinara sauce
4 eggs
1/2 tsp. onion powder
Salt, pepper, garlic powder and celery salt to taste
1/2 pt. milk
3 tbsp. butter
Boil noodles until tender. Rinse and drain. Brown ground beef in a skillet. Add sauce (reserving small amount) and spices and simmer. Mix milk with eggs. Pour reserved sauce into bottom of 8x12 inch greased casserole. Layer noodles, meat sauce and eggs mixture. Place small bits of butter between layers. End with noodles. Cover. Bake at 350 degrees for 1 1/2 hours. Serves 6-8.

Does he like cottage cheese? You can replace the ricotta with that. Or you can leave it out altogether. It's not a necessary cheese for lasagna. If you want to email me, I can give you several of my families favorites that are easy and fairly inexpensive :o)

I just use lasagna noodles, marinara meat sauce, and lots of shredded mozzarella cheese. We have ricotta cheese and cottage cheese haters at our house.

I've just left the ricotta out and used shredded Parmesan and mozzarella. Not quite the same, but not bad. Or just put ricotta on half.
