I once heard it argued that it is theological impossible to be an athiest.To be an athiest you have to know everything in order to be so certain God does not exist. If one knows everything then they must in fact, be God. They prove this to be true because they worship themselves. That is a religion.

I've heard people say this, but I don't believe it myself.
Check out the definition of a religion - it centers around the belief in, and reference for, some kind of supernatural power.
Someone who doesn't believe in that has a belief and doctrine, but not a religion.

No religion means no religion.
Religion Defined: a strong belief in a supernatural power or powers that control human destiny
No religion means the opposite, obviously. We believe in natural explanations or events and that there are no magical beings, ghosts or other hooey trying to control our lives or tell us what to do.

Religion is simply a demonstration of faith and that faith can be in anything you want. Organized religion is a group of people demonstrating faith in the same way. I choose not to be a part of organized religion but my religion is my own... as my demonstration of faith is personal to me. I believe everyone has faith in something, even if its themselves and we all demonstrate it to some extent. So in that definition we all have "religion"

If the person does not believe in God(s), this is referred to as being an atheist. If the person simply does not believe in a church, this is being an agnostic.
