My question is - do I need to increase the spice quantities if I'm making more servings?
It involves cumin seeds, turmeric, garlic, 1 whole chilli and garam masala.

I know generally you don't need to add more chilli or garlic (or do I?)

Are you trying to clean the whole family out? I looked up the recipe somewhere else and it was for one also. Apparently it's used to clean your system. I would definitely triple if you are making for 4 people. Then go by the taste.

Here is the recipe for a larger party with spices balanced accordingly:
Moong Dal Khichri
Vegetarian Recipes - Khichri Recipe

Ingredients for Moong Dal Khichri:


Rice - 1 cup
Moong dal with skin - 1/2 cup
Ghee - 2 tablespoon
Cumin seeds - 1/2 teaspoon
Turmeric powder - 1/2 teaspoon
Red chilli powder - 1/4 teaspoon
Asafoetida - A pinch
Salt to taste
Method for Moong Dal Khichri:


Clean, wash and drain dal and rice together.
Heat ghee in a pressure cooker, add cumin seeds and asafoetida and wait until seeds sputter, then add rice and dal mix and stir fry for a couple of minutes. This will coat the rice and dal grains with ghee properly.
Add salt, turmeric, red chilli powder and give it a quick stir, then add enough water to cover the rice, and 1/2 inch above it .
Pressure cook for 2-3 whistles or pressures, khichri/khichdi is ready to be served.
Add a tablespoon of ghee or butter on top of the Moong Dal Khichri/khichdi before serving .

You should increase it according to the ratio called for in the recipe. Unless, it is desired. Recipes are made for you to give you a guide. This is for you to come close to anything authentic. (if you are going for it and not use any substitute). For professional chefs, the recipe is not only for a guide, but , also to provide better control on costing for the dish and it also helps in the requisition for the ingredients.

Therefore, the decision to add more spice or any type of ingredient is entirely up to you. Adjust it according to your palate and in case you got guests, then try adjusting it for them. Remember, not all people can stand the heat of chillies.

I'm Indian and if you tell me the name of the recipe I'll tell you how to make it for 6-8 people.

if you have 8 people then add recipe 8 times
if you got 6 people then add 6 times
if 12 then add recipe 12 times

add for each person same recipe

if it is for 1 person, than double the recipe for 2 people, triple the recipe for 3 people.....etc.
