Always remember we need at least one meat, one vegetable, one starch which includes potatoes/rice/corn/beans.

Lunches:

Have you tried the Campbell's New England Chowder? Very good for lunch. A meal in itself.


Soups and grilled cheese sandwiches.


Jimmy Dean pre-cooked sausage patties are VERY good and make excellent sandwiches for lunch.


Tuna; salmon; kippers; sardines; chili; egg sandwiches of all types; peanut butter; cottage cheese with fruit; hot cereals; sloppy joes; hamburgers; Hillshire Farm's DELI SELECT containers of shaved meats of all kinds for sandwiches (you can reuse the containers).
All can be server with sliced tomatoes/onions/lettuce/etc. which gives you a vegetable along with your meat.

Suppers:

Most deli's are now roasting chickens. They are delicious. We have to stand in line at the grocery store to get one. They usually sell them beginning at 10:00 am. Try to buy two and freeze one.


Tyson's fully cooked whole chickens are delicious. I serve them often with S&W canned sweet potatoes, Stove-Top dressing, microwave chicken/turkey gravy, a vegetable, cranberry sauce, and Pillsbury Microwave Biscuits which are better than I can make. A frozen pie defrosted and fully cooked. Keeps the kitchen cool.


Hormel, Armour, Tyson, Smithfield, and other brands have packages of PRE-COOKED beef tips, roast, pot roast, pork roast, chicken, ham, meatload. Most all come with gravy. They are very good. Use these for your meat dish and add vegetables, rice, or potatoes. You will find these packages near the cold meat section, they are not frozen. If you are only cooking for yourself, you can make two or more meals out of one package and freeze them for future dinners or lunches.

Pasta and Pesto Salad

Makes 8 side dish servings or 4 entree servings

1 pound Medium past shells or penne rigate
1 tub Store bought pesto (1+1/2 cups, available on the dairy
aisle)
grated zest (just the yellow part of the skin and juice of 1
lemon
2 Scallions, chopped or snipped with kitchen scissors
1/2 pint Grape tomatoes, halve some of them and leave
some whole
1 tub (1 pound) Bocconcini (bite-size pieces of fresh
mozzarella cheese), halved, or 1-pound ball of fresh
mozzarella, diced
1 cup Fresh basil leaves
Salt and freshly ground pepper, to taste


Cook the pasta according to package directions to al dente (with a "bite" to it, or slightly chewy). Drain pasta and run under cold water. This cold shock will stop the cooking process and cool the pasta for the salad. Drain the pasta again when it is cool. Get all the water off with a vigorous shake, or your salad will be wet.

Place pesto into a large bowl. Add lemon juice. Add scallions, tomatoes, and cheese to the bowl, then the pasta. Stir salad up from the bottom and coat it evenly with the pesto. Season with salt and pepper. Tear basil leaves into strips, ad them to the salad, and fold them in.

Here are some things you might enjoy:

1. Chicken and Artichokes: 4 boneless chicken breasts, 1 can artichoke hearts, drained and chopped, 3 T chopped parsley, 1 4 oz container feta cheese or goat cheese, 1/2 cup white wine, 1 tsp mustard, salt and pepper. Cut a small pocket in the meatiest part of the chicken breast and season the entire breast with salt and pepper. In a small bowl, combine artichoke hearts (reserve liquid) parsley, and cheese. In each pocket, place a substantial amount of the stuffing and then brown each breast before placing in a baking dish. Cover and bake at 350 degrees for 45 minutes. When cooked thru, remove the breasts from the baking dish and add wine and mustard to the dish. Add remaining artichoke liquid and simmer until thickened and reduced. To serve, spoon sauce over chicken and rice or potatoes.
2. Healthy Meatloaf: 2 lbs extra lean ground beef, 2 eggs or 1/2 cup egg substitute, 1 package Lipton's Garlic and Herb soup mix, 1/2 cup Italian Bread Crumbs, 1 T Worcestershire,
1 tsp kosher salt, 1/2 tsp fresh ground pepper, 1 15 oz can diced tomatos, 1/2 yellow onion, sliced, 5 slices turkey bacon, chopped. Mix first 7 ingrediants in bowl. In skillet, saute onion and turkey bacon. Add tomatos and simmer to blend flavors. When sauce has thickened slightly, pour half of it in meat mixture and blend. Form into a loaf in baking dish. With remaining tomato mix, add 1 tsp mustard and 3 tsp brown sugar. When blended, pour over top of meatloaf and bake at 350 degrees covered for 50 minutes to 1 hour.
3. Tomatoes stuffed with your favorite tuna salad.
4. Grilled steak with fresh green beans and baked sweet potatos

Fried Egg Sandwich
INGREDIENTS

* 2 teaspoons butter
* 4 eggs
* 4 slices processed American cheese
* 8 slices toasted white bread
* salt and pepper to taste
* 2 tablespoons mayonnaise
* 2 tablespoons ketchup

DIRECTIONS

1. In a large skillet, melt butter over medium high heat. Crack eggs in pan and cook to desired firmness. Just before eggs are cooked, place a slice of cheese over each egg.
2. After cheese has melted, place each egg on a toasted slice of bread. Season eggs with salt and pepper. Spread mayonnaise and ketchup on remaining slices of bread and cover eggs with bread to make 4 sandwiches. Serve warm.

Healthy Potato and Cheese Chowder
Ingredients
3 Medium red potatoes, peeled and cubed
1 1/2 cups Canned fat free, reduced sodium chicken broth
2 Medium carrots, chopped
1 Rib celery, sliced
1 t. Butter or margarine
1/2 tsp Salt
1/8 tsp Black pepper
3 Green onions, sliced
1 t. All purpose flour
1 1/2 cups Fat-free (skim) milk
3/4 cup (3 ounces) shredded sharp Cheddar Cheese
Oyster crackers (optional)

Preparation
1. Combine potatoes, broth, carrots and celery in medium saucepan. Bring to a boil over high heat. Reduce heat to low; cook, covered, 10 to 12 minutes or until vegetables are tender.


2. Meanwhile, melt butter in large saucepan over low heat. Add green onions. Cook and stir 2 minutes or until tender but not brown. Stir in flour, salt and pepper; cook and stir 1 minutes.


3. Stir in milk and potato mixture; cook over medium heat until bubbly, stirring occasionally. Remove from heat; stir in cheese until melted. Serve with oyster crackers, if desired

i read somehwere that if u aim to have 4 or 5 different colors like green orange yellow etc you get wholesome nutrition
i find carrots tomatoes and mushrooms just o with go with a looot of things
