Dredging chicken means taking a paper sack and putting in about 1/4 cup flour, a teaspoon of salt and a little black pepper in it. Roll the top of the sack shut and shake to mix, then put your chicken pieces in one at a time and shake them until they are coated.
(I skip this step with chicken marsala, just because I don't like crusty chicken breasts.)
Good sides:
Steamed snow peas, green beans or broccoli, lightly seasoned with lemon zest, garlic and butter.
Pasta with a very light herb-and-olive oil dressing
Mushroom orzo (i.e., chop double the mushrooms and green onions for your orzo. Boil orzo according to pkg. directions in water seasoned with chicken bouillon or chicken base. Drain. Saute your mushrooms and green onions in butter until tender, add the orzo and stir till heated threw. Top with grated parm. cheese.)

My husband loves when I make this. To Dredge, is when you pound out the chicken and lightly coat it with flour and seasonings and then pan sear it in olive oil. For my side dishes I make cous cous and steamed asparagus.

It means to lightly coat the chicken with the flour. dip it in & shake off the excess.
Excellent served over egg noodles or pasta. a nice fresh salad and some good quality bread.

make sureyou got the right marsella you got one that is sweet for the pudding the other is dry for the chicken marsella-------------------------------- here is my recipe
4 breast-pound
1/4 c flour -((((((((((sifted ))))))))))))) for the dredgeingor coated flour
1/2 t basil OR oregano OR italian seasoning
1/4 c olive oil
4 T butter
1 c fresh mushrooms
1/2 c marsella
