Start with a BLT, and add a fried egg and some fresh sliced onions and green peppers. My hubby's grandma called this a combination sandwich. It is a summer favorite for us.

BLT Sandwich Recipe
Ingredients
- 4 slices of multigrain bread
- 8 slices of bacon
- 2 pieces crisp lettuce leaves, large
- 1 large tomato, sliced
- 2 tablespoons mayonnaise Container: a large skillet
Servings: 2
Serving Size: 1
Prep Time: 15 minutes
Cook Time: 10 minutes
Directions
* Fry or microwave 6-8 slices of bacon until crisp and pat off any excess fat with paper towel and set aside.
* Toast the bread until light golden brown. Place two slices of toast on a clean surface, add a leaf of lettuce on each and top that with a tomato slice or two and 3 to 4 slices of bacon.
* Spread the remaining two slices of toast with the mayonnaise. Lay the mayonnaise side over the bacon, slice in half, and serve.
* Add a piece of fresh fruit, slice of pickle, beverage and you have an easy lunch ready to go.

CALIFORNIA BLT
12 bacon slices, cooked crisp, crumbled
1 1/4 c. cooked, cubed chicken or turkey
10 cherry tomatoes, cut in quarters
2 med. avocados, diced
2 c. shredded lettuce
1/3 c. mayonnaise
1/3 c. sour cream
4 pita breads (6" size) cut in half
1/2 c. Thousand Island dressing
Combine bacon, chicken, tomatoes, avocados and lettuce in a large bowl. Toss carefully with mayonnaise and sour cream until thoroughly mixed. Fill pitas with chicken mixture. Spoon dressing over each. Makes 8 sandwiches.
You can cut this recipe down if you need to.

* 2 slices bacon, cut in half
* 1 teaspoon mustard powder
* 1 teaspoon curry powder
* 1 teaspoon red pepper flakes
* 2 slices bread, toasted
* 2 lettuce leaves
* 3 slices tomato
1. Place bacon in a skillet over medium heat. Mix together the mustard powder, curry powder and red pepper flakes. As soon as you turn the bacon over, sprinkle the spice mixture onto the cooked side of the bacon.
2. Place the lettuce and tomato onto one slice of toasted bread, then top with the seasoned cooked bacon. Top with the other slice of toasted bread.
Or you could always make it a salad :)
Take a bowl of lettuce and some bacon bits and cherry tomatoes. Add croutons and your favorite dressing. Shredded cheese and shredded carrots might be good on it too.

Use a honey-nut or whole wheat bread. Mix mayo and ranch dressing for the bread. Try a different type of lettuce. If you have been using iceberg, try bib or butter lettuce. Instead of regular red slicing tomatoes, try romas, beefsteaks or use something smaller like cherry or grape tomatoes. Try adding some red onion and some cheddar cheese and for a real twist, grill it lightly. You might also try wrapping it in a tortilla.

Try thick-cut smoked bacon, baby gouda cheese, thin-sliced Granny Smith apples and watercress on a toasted whole wheat baguette spread with a thin layer of Dijon mustard. The sweet crisp of the apples makes a nice counter point to the mild, creamy cheese and salty, crunchy bacon. The mustard gives it some zing and the watercress (tho romaine or red leaf lettuce work just as well, arugula even better, yum!) added crunch. The bread is very important, so don't skimp in quality there!
Or try thick slices of grilled beefsteak tomato, crumbled bleu cheese, crumbled crispy bacon and sliced green seedless grapes over a bed of mixed field greens (also sold as "spring mix") dressed with a light drizzle of medium olive oil and a squeeze of fresh lemon juice. Serve this as a salad with toast rounds on the side or arrange on a large baguette and slice into sandwich sections. I don't generally eat bread, but I love BLTs, so I make this salad when the craving hits.
This one is more than just BLT but really good.
2 cups cold cooked chicken, diced
1/2-3/4 cup cold crumbled bacon
1/2 cup crumbled bleu cheese (or grated cheddar)
1/4 cup mayo
1/4 cup nonfat plain yogurt (or sour cream or more mayo if you want)
1/4 cup Dijon or brown mustard
1/4 cup mixed seeds (sunflower, pumpkin) or chopped walnuts/pecans/almonds
1/2 tsp paprika
1/2 tsp garlic powder
1/2 tsp ground cumin
Salt & Pepper to taste
6 large or 8 medium size tomatoes
Cut the tops off the tomatoes, removing the stem. Using a spoon or melon baller hollow out the tomato, scooping out the pulp and seeds into a separate bowl. If you like, separate the pulp from the seeds, chop fine and add to the salad.
In a large bowl, mix the mayo, yogurt, mustard, tomato pulp, seeds/nuts and seasonings together with a rubber spatula or wooden spoon. Once the dressing is blended, taste and adjust seasonings to your preferences. Add in the chicken, bacon and cheese and fold to mix with the dressing.
Stuff the hollowed-out tomatoes with the salad mixture, using any reserve to top them off evenly. Serve immediately or cover in plastic wrap and chill. If chilling first, let stand for 10-15 minutes before serving. Serves 6-8.
Serving variation as appetizer or canape:
Stuff the tomatoes and level off. Wrap in plastic wrap and chill overnight. When chilled, remove and immediately cut tomatoes into 4 or 6 wedges: do not let tomatoes stand before cutting. Nice for parties, game night, whatever and can be eaten as finger food.

I add avocado and cheese then roll up in a flour tortilla. I call it a BLT with a twist.
* I also use Italian dressing with the mayo.

I love BLT's also I add a slice of cooked ham to it and a few strips of slised grilled chicken..
