Here is my favorite. Like Grandma used to make.

Southern-Fried Chicken

1 3 lb chicken, cut up
1/3 cup butter milk
1/4 teaspoon freshly ground pepper
1/2 cup flour
1 teaspoon salt
2/3 cup lard or oil, lard will give the best flavor.

1. Combine flour, salt and pepper in a paper or plastic bag. Dip chicken in the buttermilk. Shake one or two pieces of chicken in bag to coat.

2. In a large deep frying pan, melt lard over medium-high heat to 375 degrees. Add chicken pieces and cook turning frequently until brown and crisp, 20 to 25 minutes. Drain on paler towels

Southern Fried Chicken
INGREDIENTS:

* 2 frying chickens, about 2 1/2 to 3 pounds each, cut into serving pieces
* 2 cups all-purpose flour
* 1 teaspoon salt
* 1/2 teaspoon ground black pepper
* 1 cup milk
* vegetable shortening for frying
* 1 tablespoon bacon drippings

PREPARATION:
Wash chicken and pat dry.

In a heavy brown paper bag or large food storage bag, combine the flour and salt and pepper; shake to blend well. Pour the milk into a wide shallow bowl.

Heat 2 to 3 inches of shortening in a deep heavy skillet over medium heat, or electric fry pan set at 375° F. Add the bacon grease. When a drop of water spatters when it hits the hot oil, dip some of the chicken pieces into the milk then place in the bag and shake to coat evenly. Arrange the chicken pieces in the fat, making sure not to overcrowd. Fry the chicken until outside is golden brown and crisp, about 15 to 20 minutes, turning once to brown both sides. Reduce heat to 350° F and fry until cooked through golden brown, about 15 minutes longer. Turn once. Drain chicken on brown paper or paper towels, adding a little more shortening and bacon grease if necessary, setting or regulating the temperature as for the first batch.

Transfer the chicken to a large platter for serving.
Serves 8.

Honey Fried Chicken
“Honey-drenched chicken dipped in seasoned flour fries up crisp, golden and delicious.”

* 1 (4 pound) whole chicken, cut into pieces
* salt and pepper to taste
* 1/2 cup honey
* 1 tablespoon garlic powder
* 1 packet chicken bouillon granules
* 2 cups all-purpose flour
* 1 quart vegetable oil for frying

1. Season chicken pieces with salt and pepper, then coat each seasoned chicken piece with honey.
2. In a shallow dish or bowl, mix together the garlic powder, chicken bouillon granules and flour. Dredge honey coated chicken pieces in flour mixture, coating completely.
3. Fill a large, heavy skillet with oil to a depth of one inch. Heat over medium-high heat.
4. Fry chicken for at least 5 minutes per side, until no longer pink and juices run clear.

*********CRUSTY FRIED CHICKEN
1 (2-3 lb.) frying chicken, cut up
2 tbsp. milk
1 egg
2 tbsp. chopped parsley
1/2 cup cracker meal
1/2 cup finely ground salted peanuts
Salt and pepper to taste
Dip cut up chicken in thoroughly mixed egg-milk batter, then dip each piece in combination of ground peanuts, cracker meal, salt, pepper and chopped parsley. Be sure chicken is evenly coated with the peanuts and cracker crumbs.
Fry in hot oil in heavy frying pan til each piece is golden brown and tender. Drain; serve piping hot with gravy made from pan drippings.
Gravy:
Drain fat from skillet; leaving brown pieces of peanut cracker crust in skillet. Measure 2 tbsp. flour, blend well with 2 tbsp. fat in skillet, then add all at once, 1 cup water. Stir constantly until gravy is of proper consistency. Season to taste.

Fry the chicken in Peanut oil, the chicken is moist and tastes really good.
