CRISPY POTATO WEDGES

1/4 c. olive oil
1/2 tsp. salt
1/4 tsp. pepper
1/2 tsp. each: basil, thyme, oregano
1/4 tsp. paprika
4 to 6 potatoes, cut in wedges (quarters)
1/2 c. Parmesan cheese

Mix oil and seasonings together. Roll potato wedges in mixture. Lay flat on ungreased baking sheet. Bake at 450 degrees for 15 minutes. Sprinkle Parmesan cheese on potatoes. Bake 15 more minutes. Serve hot.

PRAIRIE POTATO WEDGES

8 lg. unpeeled baking potatoes, scrubbed and cut into 8 wedges each lengthwise
1/2 tsp. garlic powder
1/2 tsp. paprika
1/2 tsp. onion powder
1/2 tsp. seasoned salt or to taste
1/2 c. vegetable oil
2 tbsp. freshly grated Parmesan cheese
1/4 tsp. freshly ground pepper

Arrange potato wedges, peel side down, in large baking pan. Mix remaining ingredients and brush over potatoes. Bake in preheated 375 degree oven for 45 minutes or until potatoes are golden brown tender, brushing occasionally with oil mixture. Makes 8 servings.

SKINNY-MINNY'S BAKED POTATO WEDGES

4 unpeeled large baking potatoes

Cut into thick wedges lengthwise. Toss wedges with juice of one lemon and 2 tablespoons vegetable oil. Let stand 30 minutes. Pour into jelly roll pan. Sprinkle with paprika. Bake at 400 degrees, 45 minutes. Stir. Bake until tender and browned. Sprinkle with salt.



WORLD BEST NACHO POTATO WEDGES

1 package crinkle wedge potatoes
2 ½ cups shredded nacho cheese
½ cup olives and jalapenos, chopped
½ cup red bell peppers, chopped
½ cup green onions, chopped
fresh salsa
sour cream

Cook the potato wedges according to the package directions but take them out 2 minutes early. Top with remaining ingredients except salsa and sour cream. Broil until the cheese is bubbly. Top with the sour cream and salsa. A great super bowl snack!

Cheese Fries


Makes 4-6 servings


1 sack Frozen french fries, any brand or shape, prepared to
package directions
2 tablespoons Butter (tablespoons are marked on the wrapper)
2 tablespoons All-purpose flour
1+1/2 whole milk
2+1/2 Shredded yellow cheddar cheese (one 10-ounce sack,
pre-shredded, available on the dairy aisle)
1/4 cup Ketchup (about 3 squirts)


Read the package directions to see what temperature to set the oven at, then preheat the oven.

Put the fries on a cookie sheet and that in the oven. Read the package directions to see how long to cook the fries, and set the oven timer. While fries are baking, place saucepan on the stove and heat it over medium heat. Add butter and melt it. Add the flour and stir. Cook butter and flour together for 1 minutes or so. This is called roux, and it helps to thicken up sauces.

Use a whisk to stir as you pour the milk into the pot. Keep stirring until the milk gets thicker. Use a wooden spoon or heat-safe spatula to stir in the cheese. When all of the cheese melts, take the sauce off the heat and stir in 3 squirts ketchup. This is you secret ingredient.

Pour the cheese sauce over the fries or serve the sauce eon the side if you like dipping better.

I love laying out either premade french fries or home made potato wedges on a pizza stone, you can also use a sheet pan, and sprinkling them with a bit of seasoned salt. Bake on 325 for about 15 minutes or golden. It may take a bit longer for thicker wedges. Add some how sauce to ketchup for a good dipping sauce!

I cut mine and then marinate them in spices and veg oil, cut them to the size you like, I microwave them for 6-8 mnutes and while still warm add them to a stainless steel bowl with veg oil, salt , garlic powder, onion powder, paprika, chili powder, black pepper and a dash of cumin.

As they cool they absorb the flavours, then bake them a 375 for 30-40 minutes, you can turn them or stir them, I generally do this after half the cooking is done, if you make extra seasoning, you can add a bit when they com out of the oven.

For wedges, I used baking potatoes, for frys the same or in the fall, a waxier potato, even cutting them into small cubes for home fired potatos the next day if any are leftover.

Classic French Fries
4-5 large russet potatoes
peanut oil
salt

1. Preheat oven to 200 degrees.
2. In a large dutch oven heat oil to 320 degrees.
3. peel potatos and, EVENLY cut fries into 1/4" x 1/4" strips of equal length.
4. Place in a large bowl of cold water as you're slicing.
5. Drain potatoes thoroughly, removing any excess water.
6. When oil reaches 320 degrees, submerge the potatoes in the oil.
7. Working in small batches, fry for 2 to 3 minutes until they are pale and floppy.
8. Remove from oil, drain, and cool to room temperature.
9. Increase the temperature of the oil to 375 degrees.
10. Re-immerse fries and cook until crisp and golden brown, about 2 to 3 minutes.
11. Remove and drain on roasting rack.
12. Season with kosher salt.
13. Once again this is done is small batches and will need to be kept warm in the oven until all potatos are fried.

Baked French Fries

I make these all the time instead of fries and my family love them!

-Scrub several (as many as you need for your family) potatoes and cut them into wedges (leave the skins on)
-Put them in a large bowl and add enough olive oil to coat them.
-Season with salt, pepper, herbs (I use Herbes de Provence, but you could use any assortment that you have in the house) and paprika
-add in a clove (or two, depending on number of potatoes and your taste) of fresh, crushed garlic.
-use a big spoon to mix potatoes and coat them evenly in the mixture
-spread out on a baking tray and bake @ 375 until golden brown and fully cooked.

Boil potato's until almost soft, I peel mine unless I'm using small red potato's.
rinse, and cut in half
drizzle a good bit of olive oil over a cookie sheet, add potato's, fresh chopped garlic, a bit of green or spring onion, and a bit of kosher or sea salt , drizzle a bit more oilve oli over that and bake at 400 degrees until nice and brown.
