Brown Sugar Divinity
1 1/2 cups granulated sugar
1 1/2 cups firmly packed light brown sugar
2/3 cup water
1/2 cup light corn syrup
2 egg whites
1 teaspoon vanilla extract
Dash salt

Combine sugars and water in a heavy saucepan. Place over low heat and stir until sugar is dissolved, then stir in corn syrup. Bring mixture to a boil; cover pan and boil gently for 5 minutes. Uncover and cook without stirring to 252 degrees F (hard ball stage).

While syrup is cooking, in a large mixing bowl, beat egg whites and salt to stiff peaks.

As soon as the syrup reaches hard ball stage pour it in a steady stream into egg whites, beating constantly with an electric mixer at high speed. Continue beating until the mixture begins to lose its gloss and it is stiff enough to hold its shape when dropped. Quickly stir in vanilla extract. Drop by teaspoonsful onto wax paper. Cool completely, and store in a covered container.

Brown Sugar Walnut Divinity

Ingredients
1 1/2 cups packed brown sugar
1/2 cup water
1 teaspoon cider vinegar
1/8 teaspoon salt
1 large egg white
3/4 teaspoon vanilla extract
1/2 cup coarsely chopped walnuts, toasted


Preparation
Combine the first 3 ingredients in a heavy saucepan over medium heat; bring to a boil, stirring just until sugar dissolves. Cover, reduce heat, and cook 3 minutes. Uncover; cook, without stirring, 10 minutes or until a candy thermometer registers 244°.
Place salt and egg white in a large bowl; beat with a mixer at high speed until foamy. Gradually pour hot sugar syrup into egg white mixture, beating at medium speed, then at high speed until stiff peaks form. Beat in vanilla; stir in nuts. Working quickly, drop mixture by teaspoonfuls on wax paper. Cool completely. Store in an airtight container.

Cherry Divinity Bars Recipe
Ingredients
1cup butter or margarine
1/2 cup brown sugar
2 cups flour
2 envelopes Knox Gelatine
1/2 cup water
2 cups granulated sugar
1/2 cup water
1 teaspoon almond extract
1 teaspoon vanilla extract
1/2 cup chopped nuts
1/2 cup cut up Maraschino cherries
as needed coconut

Preparation Instructions
Blend butter, brown sugar and flour with fork until crumbly. Press into a well buttered pan (10x14 inches). Bake for 10 minutes at 350 degrees. Sprinkle Knox gelatine over half cup water in a large bowl and let stand. Mix sugar and half cup water in sauce pan. Bring to boil. Boil for 2 minutes. Add hot sugar mixture slowly to gelatine mixture and beat for at least 10 minutes until stiff. Add extracts, nuts and maraschino cherries. Mix and pour over cooled crust. Sprinkle with coconut and cut into squares when firm.

DAUGHTER'S DIVINITY

2 egg whites
3 c. sugar
1/2 c. white Karo syrup
1/3 c. hot water
1 tsp. vanilla
1 c. walnuts

Combine sugar, Karo syrup and water in heavy saucepan. Cook slowly to soft ball stage.
Add to beaten egg white, one tablespoons at a time, until half of syrup is used. Cook remaining syrup to firm ball stage. Add to egg whites. Beat until mixture loses its glossiness. Add vanilla and nuts. Drop onto waxed paper to cool. Store in refrigerator or cool place.

CHOCOLATE DIVINITY

2 c. granulated sugar
1/2 c. water
2 egg whites
1 tsp. powdered sugar
1/2 c. light corn syrup
1/8 tsp. salt
1 tsp. vanilla
1 c. chocolate chips

In heavy saucepan, mix granulated sugar, corn syrup, water and salt. Slowly bring to boil, stirring until sugar dissolves. Cook to hard ball stage, 250 degrees. Meanwhile, beat egg whites until stiff. Gradually pour hot syrup into stiff whites, beating constantly. Beat until candy begins to hold its shape. Beat in vanilla and powdered sugar. (Powdered sugar makes a real different in the texture.) Add chips and stir to melt partially into divinity mixture. Pour into buttered pan. Let set several hours. Chopped nuts may be added.

In a pot combine sugar, water and vinegar. Bring to a low boil. Continue cooking, stirring frequently, until mixture becomes firm. Place beaten egg white in a bowl. Add hot sugar mixture. Beat until creamy. Add walnuts and vanilla. Pour mixture into a greased pan. Using a greased knife, cut mixture into small squares when almost cool. Yields 16-20 pieces.
