SPAGHETTI PIE
Ingredients
1 1/4 lb. pasta (preferably spaghetti or bocatini)
6 eggs (beaten)
1 tbl. olive oil
1/2 cup milk (can be substituted with light cream) - optional
1 cup finely grated pecorino Romano cheese (about 4 oz.)
1 tsp. dry parsley flakes
1 lb. aged mozzarella - 4 cups - (substitute with Polly-O)
12 oz. diced soppressata - (hot or sweet) and/ or prociutto/ham - 1/4 in. dice
1/4 teaspoon black pepper
1 tsp. salt (add to water for pasta)
In a large bowl, mix eggs, oil, milk, cheese, parsley, black pepper and beat very well. Add your soppressata/prosciutto/ham and mozzarella and mix thoroughly.
Now add your pasta and toss well. Grease a baking pan (10-by-3 inch round)* and pour the mix in. Bake at preheated oven 375 degrees for 40 minutes with foil cover, and then cook additional 20 minutes without the foil for crispy golden top.
Remove to a rack to cool, about 10 minutes. Run a knife around the edge to unmold. Remove parchment paper. Cut into wedges.
*Using a corning ware (pyrex) pan is preferred for non-sticking and easy removal.
*Lining your baking pan with parchment paper is another option for non-sticking.

Easy recipe:
1 pound ricotta
2 eggs
2 packets chopped spinach
(alternatively, 1 tub bolognese sauce)
4 cloves garlic, chopped fine
shredded cheese (eg, mozzarella)
1 bottle tomato pasta sauce
Mix eggs, ricotta, spinach (or meat sauce), garlic in a bowl.
Cover the bottom of a 2 inch baking dish (preferably ceramic or heat-proof glass) with tomato sauce.
Sprinkle shredded cheese
Add layer of spaghetti (don't pre-cook)
Add layer of ricotta mix
sprinkle with cheese
another layer of spaghetti
then tomato sauce/ cheese
Repeat until you reach the top of the dish (about 2 of each layer).
Finish off with tomato sauce and cheese sprinkled over the top
Then a final cover of fine shredded parmesan cheese
Bake 45 minutes - 1 hour medium oven
(Incidentally, this is a recipe for lasagne, but should work with spaghetti as an alternative to lasagne sheets)

That would be a fritatta, Italian omelette, sauteed in fry pan then baked to finish...Cooked, cooled spaghetti, preferrably a thin variety, is placed in a rather hot, large pan with a combo. of butter and olive oil. Eggs, as many as needed to feed your guests, probably 4 to 6, are beaten well with salt, pepper, a touch of garlic powder and milk. Add into pan with spaghetti and mix well, then allow to actually fry. Turn over by useing a plate, and continue browning the other side. If this is difficult for you, at this point, pan can be put in oven or under broiler to finish (careful with the handle). When done, turn onto serving plate and garnish with additional cracked pepper and parsley flakes. Grated Parm. cheese in also great mixed in or as a topper. I have also made this with leftover spaghetti with sauce, done exactly the same way. Maunga! Can be left at room temp. cut in pie wedges.

Spaghetti Pancake Recipe
Ingredients:
2 Eggs
2 tablespoons Onion -- finely minced
1/2 teaspoon Oregano
1/2 teaspoon Salt
1/8 teaspoon Black Pepper
3 1/2 cups Spaghetti, cooked (cold leftover)
3 tablespoons Butter
2 tablespoons Parmesan Cheese -- grated
Directions:
Beat eggs, onion, oregano, and pepper together in medium-size mixing bowl.
Add spaghetti; toss well to coat. Heat 2 tablespoons butter in medium skillet over moderate heat until foam subsides. Add spaghetti mixture and sprinkle with cheese. Cook until bottom is lightly browned. Turn out onto plate.
Heat remaining tablespoon of butter in pan. Slide spaghetti pancake back into pan, uncooked side down. Cook until lightly browned. Cut into serving pieces, and serve.
Per Serving (excluding unknown items): 296 Calories; 12g Fat (38.1% calories from fat); 10g Protein; 36g Carbohydrate; 2g Dietary Fiber; 119mg Cholesterol; 430mg Sodium.

you are probably looking for a "Frittata di spaghetti" (frittata is a bit like omelette, but a bit different)
Use cooked pasta (also leavings), 3 beaten eggs, olive oil and some seasonings (avoid garlic, though).
mix together and then bake for 20 minutes
DO NOT open the oven during cooking, otherwise it will loose its nice "soufflé) look.
Easier to bake than to say!

I know it's not Spaghetti...
I take sliced hard boiled eggs and use them as one of the layers in my Lasagna. It is very good.
