EGG PIE

2 single 9 inch pie shell or 1 deep dish shell
2 sticks butter
2 c. sugar
4 eggs
1 can evaporated milk
1 tbsp. vanilla

Melt butter. Combine melted with 2 cups sugar. Mix thoroughly. Add 4 eggs mix thoroughly; add one can evaporated milk and 1 tablespoon vanilla. Pour mixture into 2 single pie shells or one deep dish shell.
Bake at 350 degrees for 40 minutes or until pie stops bubbling. NOTE: Watch oven on baking time. Taking out too soon will not give pie firmness needed. Leaving them in too long they will burn.

Pour custard over cheese. Bake at 450 degrees for 10 minutes. Reduce heat to 325 degrees and bake 25 minutes longer. Remove from oven and sprinkle with Parmesan cheese and butter. Return to oven for 10 minutes or until a knife inserted in custard comes out clean. Let set 10 minutes before cutting into wedges to serve.

Are you talking 'bout quiche, an Italian omelete pie or a hard boiled egg pie? I probably have recipes for all.
