ABSOLUTELY!!! My not-so-better half doesn't like milk in his scrambled eggs, so to make them nice & fluffy I break the eggs into a mixing bowl with salt & pepper & beat them for about 5 minutes, then I pour into a preheated pan w/ melted butter on MEDIUM LOW HEAT. Let cook for about 4 minutes without touching, then I scramble it all up with my spatula. HE LOVES THEM, as will you!
TRY & ENJOY!!! And remember... eggs for breakfast daily is the best way to maintain or lose weight as they naturally supress your appetite & feed your brain til lunch time!
Have a wonderful day!!

As you can see, your question sparked a plethora of differing opinions on the subject. I have used milk, sour cream, cream, water, and nothing in my scrambled eggs. It wasn't until recently that I learned the reason for adding liquid to eggs. Egg yolks are mostly fat and egg whites are mostly protein. The two won't normally mix together readily. If you add a little water though, the egg parts are "denatured" and will mix together easier and more completely. Only about a teaspoon of water per egg is plenty.

Scrambled eggs are BEST without milk.
Just beat the eggs. Add about a teaspoon of water for each egg, only if you like fluffy eggs. I don't bother adding water.

I always make scrambled eggs with water. They seem to come out fluffier. I usually scramble the eggs 1st then add a little water. Not as messy that way.

Yes you can make scrambled egg without milk and yes you can substitute water but not too much or the eggs will be bland . I prefer to scramble without water or milk as i find both alter the taste. If you want to stretch your dish add some onion , bacon ect....

Scrambled eggs with milk. I've never heard of that before. I've never heard of using water either. It sounds kind of gross! But yes you can still make scrambled eggs without the milk. Just mix the eggs together and pour it in a pan with a little bit of melted butter. The melted butter gives it a little flavor but it mainly makes the eggs easier to come up so it doesn't stick to the pan.

Yes, actually a small amount of water makes scrambled eggs or an omelet lighter and fluffier than milk or cream. The secret is beating them really well. I have even used a blender for a large batch, this airiates them and makes them puff up when cooked. Add your favs. (ham, cheese, onion, vegies or whatever) to the eggs in the pan after they begin to set.
