I prefer stainless myself. It's non-reactive which is important. It lasts forever and it's attractive too. I would buy a brand name stainless with oven proof handles and heavy even heat bottoms, as they would most likely be more reliable. I do have a few stainless skillets with non-stick coating along with some without. Depending on your cooking style, you might want to purchase one or two cast iron pieces.
If you have a large circle of family and friends that you entertain from time to time I would recommend these quantities.
Minimum:
1 - tall stock pan,
1 - 10" or 12 "dutch oven
3 - graduated size sauce pans
1 - each 8" and " 12" skillets with lids
2 - 10 inch skillets with lids
1 - omelet skillet
1 - large covered oval roaster (beef, pork, or chicken roasts, soups, chillies, etc. .
1 - double boiler (one pan fits over other so that the bottom pan holds the hot water in order to cook what is in the upper pan. Great for certain icings, sauces etc.
1 - Large electric roaster this really helps out when cooking for large crowds. This frees up the range oven for side dishes that need baked. When choosing this one be sure the lid has a nice high dome. The salesman that assisted me showed be the difference between to good name brands. One would only hold about an 18 lb turkey because of the lower lid. The one I bought will hold a 23 pound turkey easily. Both were the same price.

There may be other types of even better. This is just my experience.

Bone Appetite!

I most often cook with teflon, but I have a variety of all different kinds of pots and pans. Cast iron, Le Creuset, stainless steel, Calphalon, etc... They all have their different uses. Aside from the teflon, I don't have a set of anything, it's all mix and matched. :)
