The 1963 and 1/2 Mustang (sold as a 1964 model) was introduced with a straight six as a standard engine; V8 was optional. Either engine could be coupled to a three speed manual or an automatic and the V8 could also be had with a four speed stick. Later in 1964, the V8 choice was expanded to two, but the six and three speed stick were still available, with the same optional transmissions as the previous model.
In 1965, most 'Stangs came with a V8 (although some were produced with the six), with three different horsepower ratings, and the transmission choices remained the same.
For 1966, the same choices remained and in 1967, the engine choice grew to five. In 1968, the engine choice grew to seven. 1969 saw ten different engine choices; transmission choices remained the same - three speed manual, four speed manual and automatic.

To correct the other answerer, the 260 was NOT a 6 cylinder, but a small V-8. Mustangs built in the 1960's,(except Mach 1), came with one of two inline 6 cylinder engines. One was a 200 cubic inch, and the other was a 170 cubic inch. You can tell them apart by looking at the intake manifold. If the manifold is cast as part of the head, it's a 200. If the mainfold bolts to the head, then it's a 170. They also came with the 260 and the 289 V-8's which are hard for a non-mechanic to tell apart. Transmissions were either 3-speed, 4-speed, or a C-4 automatic. C-6 automatics became available in the 1968 models along with 351 V-8 engines.

Standard power plant was a 260 cid 6 cylinder engine with a 3 speed transmission. Optional was the 289 cid V8 with either an automatic or 4 speed manual.

Quite a few of them were V-8's (289) and 4 speeds.
If you couldn't drive a stick there was the automatics also.
