Performance in any field, including learning, could be represented in a curve, in graphical form, to reflect optimum performance, proportionate to efforts or to expectations, or production targets, as the case may be! So, "you are not on the curve...", should mean, your performance is not optimum: step up efforts, in terms of faster results produced in relation to current timings, or, greater quantities produced, or, better results in exams, if in learning! This applies to performance in any field, including health, where it is possible to relate your progress to a fitness curve, or, simply a 'health curve'!

If it's about the 'learning curve', I suppose it means you haven't really started learning yet. Just because you graduated from school doesn't mean you know much about Life.
If it means a 'curve in the road', maybe it means you shouldn't start turning until you get to the curve. Don't get the horse in front of the cart. ...er, something like dat. .
