We recently went to Subway, and asked to have the Mayonnaise put on the bread before toasting, and the "Sandwich Artists" said they couldn't do it because we would get sick.

First, My mom has a recipe that bakes Mayo and Cheese and Butter on Garlic Bread... Never gotten Sick.

Second, I put Mayo on my hamburger buns, and toast them... Never been Sick.

Third, doesn't Quizno's toast the whole thing with sauces and all?

So is Subway training their employees correctly, is there something wrong with this practice? (On a USDA / OSHA level?) Also if you could post a link (I'm more interested in Facts then Opinions)

I think it is Subway's policy because I've been told this twice at two completely different stores that weren't affiliated.

Thanks for the answers from the food safety people! Hard to choose a best answer on this one.

I have heard that it will make you sick, however I never got sick when I did toast mine.

Tell them next time to toast it then add the mayo. They should object to that.

They could be thinking it has something to do with the temp. of the food allowing bacteria to grow and make you sick, however time is also a huge factor in that so heating mayonnaise on a sandwich that you are going to eat right away is not unsafe. But even if you're not planning on eating it right away it can go in the fridge and still be safe. You just want to make sure it doesn't sit for an extended period of time at a temperature from 40 degrees to 135 (recently changed from 40-140), these are the temps at which bacterica grows rapidly in perishable foods. I used to manage a cafe that served toasted paninis and we put mayonnaise on before toasting the sandwiches without any problems, nor did we ever get cited for something like that on a health inspection. It could just be that a customer once accused them of the mayo making them sick and the store manager is being overly cautious.

No you won't get sick because it takes a while for bacteria to grow on mayo. Getting it toasted will only heat it up. There is not enough time for the bacteria to grow. I make club sandwiches and put them in a sandwich press after I put the mayo. I'm fine. And yes, Quiznos toasts the entire thing and serves it to you. Besides, Quiznos is much better than Subway. I think Subway is getting kind of "snooty" now because of their diet thing they have going on.

The problem at Subway is they do not maintain it at between 32 and 38 degrees Fahrenheit and it is uncovered - mayonnaise is just oil, egg and lemon combined until bonded, it is not cooked- this lack of heat makes it a little more risky to leave out (think of summer potato salad stories). If you have less than cold and uncovered mayonnaise sitting around toasting it isn't going to help. Oddly enough it is safer to serve as is than heat it.

You are correct though that properly chilled Mayonnaise can be successfully used as a toasting agent with yummy results!

There is nothing wrong with hot mayo as long as it is consumed immediately. There are many regulations pertaining to the proper cooking and holding temperatures of foods. Although warm mayo, between 40 and 140 degrees is the perfect place for bacteria to grow, if you go from refrigerated mayo to hot mayo quickly and consume it right away, bacteria has no chance to grow.
It may be against company policy for that company not to allow mayo to be heated to avoid food borne illness problems. But, it is not illegal, nor will it get you sick.

You're right. They are wrong. Mayo is mainly egg and oil. When you toast it it is like cooking it. People get sick when they let mayo get warm (like at a picnic or a buffet where it sits out too long) and bacteria begins to grow on it.
I think they were trying to obey the rules of their store and just made up the excuse.

You can get sick from that but Subway is trying to cover their butts in case you do get sick. They do not want you to turn around and sue them
