I usually just throw a dash of cayenne pepper into the mix. My hubby likes it sliced and fried in a little butter. Yummy. (but fattening!)

whole corn kernerls, cheese, herbs, what about like sausage? sounds wierd but it might be tasty! You could make "chili" corn muffins with ground beef and beas on them, along with cayenne pepper.

How about sun-dried tomatoes or pesto or both!!!
They also sell a sun-dried tomato pesto which goes fantastically with a Turkish pide.

Make your cornbread with cake mix! No. I'm serious. The best I've ever had...

Get a box of yellow cake mix. Substitute a can of creamed corn for the oil. If you want it extra corny, use another can of creamed corn and add an extra egg.

You can't get much more interesting than yellow cake in your cornbread...

try putting in cracklings. Possibly--chile, cheese. You can even put fresh hashbrowns. Cornbread is like stew--the more different things you put into it--THE BETTER IT TASTES!!!! GOOD LUCK
