you can start with California rolls-they are the most simple and do not include raw fish.
You have to find an asin market and get some dried seaweed, I prefer the salted.
The basic California roll is rice, cucumber, and imitation crab. You can purchase a device to roll it up, or just do it yourself-takes practive and creativity, add what ever you want.
You can experiment with real sushi, by going to the butcher and getting "sushi grade" fish. Tuna is popular.
You must be careful w/ raw fish, make sure it's sushi grade. Then, you wet your hands, shape your rice into 2 or 3 in loafs and place sliced tuna on top. Have soy sauce and wasabi (purchased in powder form or prepared) for dipping. You can also make tuna rolls, similiar to California rolls, but without cucumber and the other ingredients.
A hand roll is like a taco, in that you loosely roll it up and eat it by hand-a cut roll, is tightly rolled and cut into bite size pieces.

There are loads of website tutorials and book as well as DVD's available on how to make your own Sushi. Sushi can be made with many different fillings but the rice is crucial. The first and most important thing is to find a good Asian market for the fresh Sushi grade fish. It is important that you get a high quality fish and the rest is pretty easy. You just need a rice cooker (a must if you will make sushi often or even if you are a rice eater) it takes all the guess work out and makes the rice perfect every time, a bamboo mat (cover with a 1gallon ziptop bag it is easier than saran), Sweet Mirin (to flavor rice), Wasabi paste or powder, Soy sauce, ponsu sauce, and any other sauces you like. Don't get suckered into buying pricey "Sushi rice" in the market a bag of Calrose is all you need - do not rinse it first you need the starch for the sticky quality. Good Luck!
