1. Lots of butter that has been used to saute fresh garlic and mushrooms. Toss pasta with this, a bit of dried parsley for color and fresh Parmesan cheese to taste. The more garlic, the better on this recipe. It will mellow as it cooks.

2. Saute in olive oil fresh garlic until mellow, add tomatoes, chopped fresh basil leaves, sliced black olives and white wine until the oil and wine combine to make a sauce. Add salt and fresh ground pepper to taste and toss with pasta.

3. Add to bottled Alfredo, sauteed mushrooms, cooked bacon pieces and garlic. Dried parsley for color. Toss with pasta.

4. Fry bulk Italian sausage, drain fat. In casserole or baking dish, layer bottled spaghetti sauce, cooked pasta, sausage, grated mozzarella cheese and do again ending with sauce and top with cheese. Bake in over at 350 degrees until cheese is melted and everything is heated through which doesn't take long if the meat and pasta are hot.

Chili oil, water chestnuts, and peanuts or cashews for an asian flair

Cinncinnati style chili- serve chili over pasta

I use jar spaghetti sauce but I add a dash of cinnamon and a spoonful of brown sugar to bring up the flavors...

My fav: Cut cherry or grape tomatoes in half - put them in a skillet with some fresh minced garlic and balsamic vinegar and olive oil - kinda crush the tomatoes so they release some of their natural juices - simmer them a few minutes, and the pour the mix over angel hair pasta - top with parm

My new fav: buy pre-cooked chicken breast, and deli-aisle alfredo sauce - cook penne or fetuccine - instant restaurant entree!

creme fraiche
smoked salmon bits
dill
lemon juice

After you've cooked your pasta, remove it from the pan. Then add the ingredients and heat under a medium heat until creme fraiche has melted. Then put the pasta back in. Takes about a minute and is gorgeous.

Play with the sauce as much as you like. But eat with Italian wine and Ciabatta bread. Oh afterthought, put some peas in the sauce. Not too many.
