I think making a big batch of something like chicken curry with some rice and you can have it over the weekend, put lots of yummy vegetables in and simmer until nice and soft.

Okay, so stick w/ simple things you know... but put on a twist so it's a bit out of the ordinary. Try a filled pasta (refrigerator or freezer section -- tortellini/ ravioli/ etc) where all you have to do is boil it until ready. Get some fresh basil and/or parsley (dirt-cheap in the veggie section, all you do is rinse and chop) and Parmesan cheese (it's going to last and has lots of uses, so don't worry if a hunk runs 4 bucks). Sauce can be either a regular jar sauce or simply a good extra-virgin olive oil drizzled over top -- the fresh cheese and herbs will liven it up. Add a salad kid or simply toss the cheese and herbs w/ some Romaine Lettuce. Jello and whipped cream in a martini glass or wine glass is very elegant and a breeze to make.

INGREDIENTS:
5 red potatoes, quartered
9 oz. pkg. frozen peas in butter sauce
2 (9 oz.) pkg. fully cooked, breaded chicken fingers
1/2 cup marinara sauce
1/2 cup sour cream
1/4 tsp. salt
1/8 tsp. pepper
PREPARATION:
Preheat oven to 400 degrees. In large pot, place quartered potatoes and cover with water. Cover pot and bring to a boil. Add pouch with peas and simmer 15-18 minutes until potatoes are tender, turning pouch over halfway through cooking time.
Place chicken on cookie sheet and bake at 400 degrees for 9-11 minutes until hot. Heat marinara sauce in microwave oven.
Drain potatoes, return to pot, and add sour cream, salt, and pepper. Coarsely mash potatoes, adding more sour cream if necessary. Cut open pea pouch and pour into serving dish. Serve chicken fingers with marinara sauce for dipping, along with potatoes and peas in butter sauce. 5 servings
INGREDIENTS:
10 oz. pkg. frozen creamed spinach
24 oz. pkg. frozen cheese ravioli
16 oz. jar alfredo sauce
3/4 cup shredded Parmesan cheese
8 slices french bread
PREPARATION:
In large pot, bring 2 cups water to a boil. Add spinach pouch and bring back to boil. Cook for 3 minutes. Then add ravioli, return to a boil. Reduce heat and simmer for 5 minuets until ravioli float. Pour contents of pot into colander.
Remove spinach pouch from ravioli.
Cut open spinach pouch and pour into large skillet. Add alfredo sauce and mix gently to blend. Heat over medium heat 4-5 minutes until the mixture just begins to bubble, stirring frequently. Add cooked ravioli and stir to coat. Heat gently. Sprinkle with 1/2 cup cheese.
Toast one side of bread. Sprinkle untoasted side of each french bread slice with 1/2 Tbsp. cheese and toast until brown. Serve bread with ravioli. 6 servings
