I am going to have wood flooring and oak cabinets. I don't know about the countertops yet.

Black goes with any color. Alot of the countertops have black flecks or spots, whether you use a laminate, man made solid surface or natural stone.

Get an off white granite with black and brown [ wood color ] flecks - that with go with everything, no matter what color.
Walls could be: matched to a special kitchen item [ inherited or purchased bowl, pitcher, canister set ] or:
pastel pink or rose
peach or coral
light gold or vanilla pudding yellow
pale lime or mint
aqua or sky blue
lavender
Neutral walls will not work with the black, and brown wood.
Add a valence that has a bit of the wall color, a plantor two, and some pretty canisters etc. for the counter.
