Northern Michigan University (NMU) offers a degree in "Ski Area Business Management". I don;t know much about it but considered it at one point. check out www.nmu.edu for more about the school and I'm sure there is more on there about the degree. Hope that helps.

Sierra Nevada College is a small privet college located in Incline Village right on the banks of Lake Tahoe. There are 7 resorts all with in a 20min drive. The school offers a Business Degree with an emphasis in ski resort Management. Its a very well respected program and you get to work on the mountain not just learn about it. Check it out.

Actually some mail-order or online degrees offer programs in Hotel management and guest services.
You can do a web search for hotel management degrees and get a list of schools, both online and physical, that offer such programs.
