I haven't been to Wonderland in a few years and would like to go on a day where I can enjoy as many of the attractions as possible; so I'm wondering whether anyone has any advice on how to pick a day in July/August where it will be slower? (i.e. any particular day of the week, etc.)

Monday, Tuesday or Wednesday are probably better. You avoid everyone that has the weekend off and traveling there with the kids. And a lot of time they may take a day or so off, and things start getting busier as early as Thursday. If they take Monday off it is usually mostly a travel day.
The other thing to try is an overcast day. It could actually be a better time instead of intense heat, yet people change their plans if it looks like rain.

I went last Thursday. First time in yaers for me as well! There were hardly any lines, even for Top Gun! I waited literally 5 minutes for Top Gun!
I would say any weekday would be fine, except Friday.

It's summer vacation for students, so....it's busy every day! Still probably best to go on a weekday.

I agree with one of the ppl above me - Mon, Tues, or Wed would probably be best.
