If it's well sealed with the air pressed out, I can get 3-4 weeks before I see green spots.

Actually, "until it's green" is the correct answer. As long as cheese is frigerated it will keep forever. You can even cut off the green from block style cheese and still eat the remaining cheese.

I don't because it just does something to my head. But it is doable.

Until it's green!!! Just kidding! You didn't mention if it was sliced or a whole chunk. Sliced is good for 4 days. I;m not sure about chunk-kind.

When it turns green and fuzzy it's gone bad. Otherwise, it should be fine.
