In the case of Jericho, the fans were so outraged that CBS cancelled it, that they sent tons and tons of peanuts (this is referring to a line said on the show) to the New York & Los Angeles offices until CBS caved in and brought the show back.
This does not happen too often. At one point in time, fans kept Roswell from being cancelled because the fans sent in bottles of Tabasco sauce. But eventually (I think 1-2 seasons later) it was cancelled.
It can also happen for other reasons. For example, Family Guy was brought back because of the enormous DVD sales and fan demand.

Fans of the show conduct and organize contacts to demonstrate the popularity of a program which has been cancelled. If the response is enough, the managers of the network will bring it back - or sometimes,, another network will pick it up.

it was supposed to be cancalled, but the Jericho fans showered CBS with e-mails, phone calls, and about 200, 50 lb bags of peanuts, refering to the last episode "nuts" just to let CBS know what the fans thought of the cancellation.

Public outcry, in the form of petition to the network.
Either that, or another network may pick up a series that is on the outs at the current network.

Most of the shows that come back are because of popular demand. For example, family guy was brought back after HUGE DVD sales. The tv show "Popular" was brought back because they had a pretty big internet fan base despite low ratings...

Very very unlikely, but u have a better chance of a movie being made if it was loved enough. Like Firefly. A GREAT show, and finally was made into a movie to continue the saga

Campaigns by the fans. If enough people write in criticizing them for it, they might give the show another chance.

The producers have to pony up some big dollars to the studio heads to protect against future loses.
