there are some people that believe that raw food is the way to go. Cooking destroys the "beneficial" enzymes in food so they eat everything raw.
When meat is handled properly and stored properly, then your chances of becoming sick are very low.
From a culinary point of view, eating is more than just flavor. Eating involves visual, feel (texture) as well as taste.
Raw tuna or beef has a different taste and texture than cooked.

the same way that is sashimi, raw fish, you have dishes with raw meat as, carpaccio(thin slices of beef with olive oil, lemon juice which cooks the meat, Parmesan, capers), raw kibe, beef tartare etc.., you always have to know the sources of the place that you getting from it,if they safe, other than that, it's ok kids, pregnant women and people with low immune system disease should avoid

raw meat can make you sick in the same way that lettuce and spinach have recently made people sick......so really......who cares at this point.

You need to have really fresh meat in my opinion. I'm not a fan of it. Beef tartar is about all I can do.
