ROASTED GARLIC MOZZARELLA MASHED
POTATOES

3 lbs yukon gold potatos
half and half
1 cup grated mozzarella cheese
5 cloves garlic
salt and pepper
1 egg

Peel potatoes, halve and boil for 25 min. Do not cut up into little pieces as you will make the mashed potatoes watery.
Coat garlic on skin with olive oil and bake at 350 for 15 min.

Set aside drain potatoes and add enough half and half while mashing to get the consistancy you want. Squeeze garlic out of skins into the mash, add egg and cheese, mix rapidly and add salt and pepper to taste. Good sea salt goes a long way for taste.

Serve promply, don't let it sit around as the cheese loses it's stringy effect.

One of the simplest recipes for using buffalo mozzarella is a simple antipasto salad of plum (roma) tomatos cut into wedges, the cheese cut into pieces, and basil leaves. Leave as is or toss with some vinegar and olive oil.

I've also used buffalo mozzarella cut into slices instead of shredded cheese on homemade pizza, kind of a homemade "pizza rustico."

Also goes well in slices/chunks with a small bowl of pasta sauce, focaccia bread (or other Italian-style bread), and some dipping oil and herbs for an appetizer or light lunch.

You can have a small amount of mix greens, slice some tomato, slice bufalo mozzarella, and chopped fresh basil.

put a small amount of mix green in the center of the plate, layer the tomato and bufalo mozzarella every other one, sprinkle the basil, and drizzle it with olive oil and balsamic vinager.

I love to eat it that way. It's easy and tasty

Twice Grilled Peppers with Buffalo Mozzarella and Caper-

3 red bell peppers
3 yellow bell peppers
3 orange bell peppers
3 tablespoons olive oil
3/4 teaspoon kosher salt
3/4 teaspoon freshly ground black pepper
Italian or French bread, thinly sliced and grilled
1 pound buffalo mozzarella, cut into 1/4-inch thick slices
Fresh basil leaves, for garnish

Heat your grill to high. Brush bell peppers with 2 tablespoons of the oil and season with 1/2 teaspoon of salt and 1/2 teaspoon of pepper; grill the peppers until charred on all sides. Remove from the grill, place in a bowl, cover with plastic wrap, and let sit for 10 minutes. Remove the skin from the peppers, brush them with the remaining oil and season with salt and pepper, and place back on the grill and cook until slightly charred on all sides.

Slice peppers into quarters or to fit over bread slices. Place a slice of mozzarella over each pepper and drizzle with the Caper-Basil Vinaigrette. Garnish with fresh basil leaves and serve at room temperature.

Caper-Basil Vinaigrette:
3 tablespoons red wine vinegar
1 teaspoon Dijon mustard
1 clove garlic, finely chopped
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/4 cup pure olive oil
2 tablespoons capers, drained
2 tablespoons chopped fresh basil leaves

Whisk together the vinegar, mustard, garlic, salt, and pepper in a medium bowl. Slowly whisk in the oil until emulsified. Stir in the capers and basil.

try this...make some pasta..rig..would be good, fry 1 pound of ground beef...when both are done, DE grease beef, put together, and mix in sauce...and a little cheese...put in square baking pan, put more cheese on top. put in oven at 450, for 5 or 10 min..let sit for about 5 min, to cool...good stuff..might want to add garlic, and/or oregano.
