Hi everyone, I love to bake cakes and such. I have a few cake and cooking problems though.

Can anyone help with this?

I have experience were the middle of the cake is still raw and the corners of the cake is cooked. Why is that happening? How do you make a moist cake from scratch? Sometimes my cakes are so dry you can choke on them.

When I make Fettuccini Alfredo with fresh parmesan cheese and once I add the cheese with the egg, milk and butter mixture, the cheese gets clumpy, I never understood why?

With the cake you might want to buy a thermometer to check and see if your stove/oven needs calibration... It just clips to the inside and you can read the ACTUAL temp your oven is and adjust accordingly.. It also helps to rotate the cake pans half-way through cooking in case you have a hot spot in your oven.. I like to use cake mixes.. It's fast,cheap and easy and the results are similar to homemade.. I often for the oil substitute a bit of applesauce to get a moist cake.. To check out some cake mix recipies go to Kraftfoodandfamily.com.. They have some wonderful cakes to try.. I just made a Strawberry-Jello swirl cake that was fantastic and no one has to know it wasn't completely homemade ! As for the sauces I think your cheese clumps up because you are using cold milk or cream... It's always best to heat the milk or cream in the micro or use at room temp.. Also, do you beat the egg and add it to the cream/milk? If not you could end up with scrambled eggs in the sauce... I like to add a bit of liquid to my flour and wisk so it doesn't clump as well... good luck

You might have a problem with your oven but try this:

Center your cakes in the middle of the oven with one layer on each rack if baking two layers.

Try using butter when baking anything

Add the cheese in slowly add stir continuously with a whisk this should help if not melt the cheese first then add to egg mixture

Not to sure about the Fettuccini problem, maybe you need to keep stirring?...For the cake problem, could be your oven, what temperature are you using? Could be too hot. Are you constantly opening the oven? If so, don't that will mess it up too. Cakes mostly come out too dry when you cook them too long. If you are following the recipe then it is probably your oven.
