In a separate bowl mix together, mayonnaise, salt, pepper, garlic powder (a little), paprika, celery seeds, onion powder to taste, and a few tablespoons of sour cream. Mix these ingredients all together and add to your cut up hard boiled eggs that are in a separate "large" bowl. I like to use a "large" bowl so I can gently and thoroughly mix the eggs and dressing together.

Egg Salad I
INGREDIENTS
* 8 eggs
* 1 tablespoon mayonnaise
* 2 tablespoons prepared Dijon-style mustard
* 1 teaspoon dried dill weed
* 1 teaspoon paprika
* 1/2 red onion, minced
* salt and pepper to taste
DIRECTIONS
1. Place eggs in a saucepan and cover with cold water. Bring water to a boil; cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.
2. In a large bowl, combine the egg, mayonnaise, mustard, dill, paprika, onion and salt and pepper. Mash well with a fork or wooden spoon.
3. Serve on bread as a sandwich or over crisp lettuce as a salad.

Bring water to a full boil, add eggs. Bring back to full boil, then turn burner down to medium. Keep on medium for 15 minutes only. Then cool quickly and peel and chop eggs into a bowl. Add some chopped onions, mayo, pepper and a dash of mustard. Mix together and chill in the fridge. Enjoy!

6 hard cooked eggs at room temp
1/2 cup mayonnaise, or amount to your liking
salt, to taste
white pepper, (No subsitutes) to taste
Finely chop the hard cooked eggs. I use a pastry tool for this.
Add the mayonnaise, salt and white pepper. Do not subsitute black pepper as the taste will not be the same.
When you taste this egg salad made with 4 simple ingredients, you will wonder why you ever added anything else. Please try it!

6 hard boiled eggs peeled and smashed up. Add mayonaise (a good one!), salt, pepper, a little garlic powder, finely chopped onion and finely chopped celery and fresh chopped dill weed. The dill weed goes really good with the egg.
