I've heard of songs like Loving you or something from Mariah Carey where the pitch goes really high...how do they do that? How do you sing that high?

It all comes down to the way your vocal cords are shaped. The longer and thinner they are, the higher you will be able to sing. It's basically an extension of your head voice, but it's definitely not something that everyone can do or should attempt to do, or you can really damage your vocal cords. If you're interested in learning how to do it, find a good voice teacher who can help you discover those notes and how to access them in a safe and healthy way (not squeaking, actually singing).

that is the super head voice or whistle register, they get that range by practicing in the head voice (most women sing purely in head voice, unless they are "belters" ) . for most women the whistle register is useless and used only for practice. when you hear someone singing in whistle, it means they have practiced it A LOT.
