to work to tell me how his previous night's meeting went with his colleagues. I really have no interest and don't know why he keeps doing this. He keeps asking how I am. What am I to make of this?

If it bothers you that he does it first thing in the morning, ask him to update you later in the day. Or say that you're busy but you'll stop by his office when you get a minute.
Truth is, people are more likely to keep an employee if they like them, as opposed to how qualified they are. Obviously the good doctor likes you, which is good for your future there. So treat him nicely. And it's okay to tell him nicely that you are a little swamped on occasion.

he may have worn out the other people in the office so you are "fresh meat"... He probably is lonely and has no one to talk to at home... You can either say I am busy at the moment or just go through the motions, you are a temp right...

I don't think he's being harmful i think he just had good intentions he prob loves his job and wants to keep a check and is under the mis-undertstanding that you don't mind hearing about his meetings maybe that you are even interested. Just tell him that you are doing fine theres no need to phone and that next time you will phone him if you need to tell him anything.

FGS - He's keeping you updated with what's going on in your place of work. He probably got into the habit with the last person in you post. Lighten up.

Say to him that there is no need for him to update you every day on his meeting.

I expect he is a bit lonely.
