While it used to be that most police dogs were German Shepherds, the trend has changed in the past 15-20 years to the Belgian Malinois due to the fact that shepherds could no longer be bred with sufficient aggression, nerve, mental stability and enough drive to do police work. The malinois has been recognized as THE premier working/police dog in the world in the last several years.
ADD: Ok, here we go. There are NO malamutes used in police work and malinois are NOT bigger then shepherds in size as a rule.

Depends on what kind of police work they're doing and what department it is. Dgs can be trained to chase after bad guys, find narcotics, find cadavers, find a missing live person, find explosives, etc.
The most common breeds for police work are German Shepherds, Belgian Malinois, and Rottweilers. Bloodhounds are common for tracking. Labs are also used. Beagles are also used for narcotics detection but in fact almost any dog can be trained for narcotics detection, I recently read an article about an agency in the mid-west who had their first Chihuahua drug dog.

the Belgian Malanois is far and away the police dog of choice. it is completely versatile, it can apprehend a suspect, it can find drugs, in short, anything a police dog is called on to do, it can do it.
it's bigger, much stronger, and much faster than the German Shepherd, (who tend recently to have been bred with that sloping hind end, which must take away some of its power).
the malanois is also a great family dog.

Depends on what the dog has to do. If it is related to a bomb or a terrorist, they usually use big dogs that sniff well, like Alsatians and German Shepherds. In cases of high level of sensivity (where it gets difficult to sniff a drug or chemicals in air-tight containers) they call in Labradors or other medium-sized smelling dogs.
My answer has alread been mentioned before, but I wished to show it as one answer in detail.

Police dogs are normally German Sheperds. They use real big dogs for police dogs but they don't always choose mean dogs.

The common used dogs are german shepards and malamutes because of their aggression. Rotts and Labs are used to. These are the most common others are used but more for drug detection.

Generally they are German Shepherds/Alsations or Belgium Shepherds. But almost any breed can be trained, and not all have to be mean. Labradors and Collies are used for drug raids, for instance.
