I really want to make some white rice but I do not like it without spices, or something with it. There are various spices and some other things that I have but I do not know how or what to put in it. Anyone have any ideas?

The nice thing about white rice is that you can give it any kind of a spin that you like. For Spanish rice, add some tomato sauce, a dash each of chili powder, onion and garlic powder, and some cumin. For an Italian flavor, serve the rice with a dollop of basil pesto on top. Sometimes, I just add a little soy sauce and butter to white rice to perk up the taste.

You can even add sugar, cinnamon, a few almonds, and a dash of vanilla for sweet rice. It just depends what you're hungry for.

A long time ago in a Vegetarian magazine there was this recipe that I fell in love with and it was a rice dish....these are the spices that really knocked my socks off and I still use it today.

The spices need to be prepared first and then added to the veggies and rice.



In a frying pan cook in oil or part butter and oil
1 medium chopped onions
2 chopped garlic cloves
1 cup chopped celery
add the rice 1 cup or more depending on how much you are going to need. Stir well.

Spices to add:
pinch of ground cumin
pinch of hot red pepper flakes,
1 teaspoon of salt
pinch of black pepper.
If you like turmeric the golden spice add a pinch also.
Now add 2 cups or up to 3 cups depending on what it absorbs into the rice water or stock from chicken ...

What makes this rice extra good is the addition of two things raisins and nuts....golden raisins or dark ones..and almonds, walnuts whatever nuts you can find...I used almonds...

Add these at the end of the cooking and let simmer a little longer now taste it for adjusting the seasoning...and how moist you want it....watch it so the water or stock does not evaporate too quickly....Top with chopped PARSLEY OR CILANTRO
the green leafy veggie add great taste and texture...

This is great served by itself or with a meat of your choice or fish....it's a great dish for bringing to a party also.

You could have fried rice, I just had that tonight and it was really good. I don't have an exact recipe cause I made it up off the top of my head. Just heat a skillet or pan and add sesame oil to it. Then add some garlic and scallions to the pan and cook until the garlic is a little brown. Then I added some frozen peas and corn. Then you add an egg and scramble it. Then add already cooked white rice, some soy sauce, some more sesame oil, and butter. It is the best fried rice I've ever had. I'm surprised I made it up though.

i make a couple different rice recipes. first is a parmesan pecan rice. I saute onion in a bit of butter until soft, then add rice and chicken stock and let it simmer. When done cooking I add in roasted chopped pecans, parmesan cheese and parsley. great for a nice steak dinner.

I also like to put in strips of lemon zest, bay leaf and sauted onions. very citrusy and light.

and then have another that is more spicy kind of asian fusion style that has dried currants, golden raisins, cumin and some other stuff..that's a rachael ray recipe attached. great with chinese lemon chicken.

It's not a spice, but I like to cook my rice with chicken broth instead of water. Gives it a great flavor!

Chop up some cilantro. It tastes great with white rice. Try some soy sauce also.

I cook my rice in chicken broth and a bit of tumeric. It gives it a beautiful color like saffron, but isn't expensive. It is also a cancer preventative. I add sauteed sliced green onions.

Brazilian: sautee Garlic and Onion in the pot before you add the rice and water.

Puerto Rican: cilantro and achiote (can use saffron instead)

Indian: cilantro, raw peanuts (or cashews) and zest of lemon (maybe saffron for color), and cardamon (can add cinnamon and/or cloves as well)
