dont have any and id like to know what it will taste like if i dont put vanilla in.
they are the cookies made with sugar, cocoa, oatmeal, etc.

I suppose it depends on how keen your taste is. I can't taste small amounts of vanilla (like a teaspoon in a cake or cookie mix) in recipes. But then, my taste isn't the greatest.

Yes, you can. Vanilla enhances the flavor of chocolate so your cookies might not taste as chocolaty, or you may not notice at all. They'll still be tasty tho!

the vanilla adds flavor to everything so if you drop it it is best to add some other type of flavoring like mint or whatever you have around that tastes yummy. I love rum extract. not because I love rum but it adds a wonderful aroma.

You can. But they will miss a slight yumminess. If you have another extract, almond or brandy etc, you can use that.
