A Philly cheesesteak is thin-sliced beef (usually top round, I think), topped with cheese, and served on a long hoagie roll. It can be made "wit" or "witout" fried onions.
The steak is best cooked on a griddle or flat grill, chopped with a flat spatula and flipped/scrambled around a few times to get it evenly cooked.
A TRUE Philly cheesesteak is served on an Amoroso's roll (they'll deliver outside the area)*. The cheese used should be Cheese Whiz, but melted Provolone and white American are also acceptable.
Never call it a sub. ;-)
*yes, ocds, you can get a hoagie roll/long roll pretty much anywhere. However, Amoroso's has a cult-like following; hence displaced natives will have them shipped for an "authentic" steak. We take our cheesesteaks seriously 'round here.

Uck cheesewiz!! It isnt a cheese sauce. I t is cheese, And brighteyes outside of the East coast the term hoagie lacks a meaning. So on an italian long roll not to hard on the outside ans soft on the inside. You can get mushrooms too! I perfer white cheese. Born in Philly

There's really no trick to it. It's steak sliced thinly as you said with a very mild cheese but I have never been able to make them at home. It's much easier to make hogies( basicly just a great sandwich)

What BriteEyes said...but if you take it with onions, ("wit' ") the onions should be chopped up and grilled up with the steak.
