Canola oil is used mostly for it's lightness in flavor, and had a delicate fragrance as well

The oil is possibly tainted. Once it is opened it should be stored in a cool dark place
there is research that argues that canola oil does taint in shorter time than other vegetable oil mediums and not reccomended for cooking at temp over 300 degree F due to the fact this releases toxins

I never used Canola oil in brownies, but if it has a funny smell and taste, I would say that the oil is old. How long have you had it. After I open my oil, I replace it ever 2 months.

Most olive oil has a strong flavor, and it will affect the brownies. I would subsitute margarine as Whit said, at a rate of 3/4 to what the recipe called for in canola oil. Or, and this is quite revolutionary... borrow a cup from a neighbor. *gasp!*

Your oil is quite likely rancid. Once you open a bottle of oil, it really needs to be stored in the refrigerator. Canola oil will stay liquid. Regular vegetable oil goes cloudy and starts going solid, olive oil will solidify and will need to be warmed a bit to get liquid again.

canola oil does give off an odd fishy taste and flavor when subjected to high heat from baking and grilling. definitely use vegetable oil when baking. i found out the hard way.

I couldn't figure out why my brownies & cookies tasted horrible then realized it was that lousey tasting new bottle of canola oil, I threw it in the garbage & will not buy it again.

I use regular vegetable shortening for my brownies and canola oil for vegetables.

I think your oil went bad (rancid). Canola usually doesn't leave an aftertaste.
