Potassium helps to regulate your blood pressure, therefore proper quantities in you diet will help over the years to prevent stroke. You should however keep your sodium intake at a reasonable level - a little higher if you are sweating a lot, but otherwise your body does not need any more than the recommended daily allowance (and in fact you do not need nearly that much). Foods high in potassium would include: cantaloupe, bananas, figs, potatoes, tomato juice, and spinach.
Also aiding in the lower risk of stroke would be plenty of foods that work to "thin" your blood by reducing plaque. This would typically mean foods high in omega-3 fatty acids such as: salmon, flax seed, and walnuts - as well as flax and some fish oils.
