The easy way is to trap them. Most traps consist of a tube or rectangular box of screen with cones or ramps at either end. They go in after bait, and have trouble getting out. Oily meats like bacon, hotdogs, or dead fish are good baits.
If you want to catch them on a hook and line, put a little wad of netting from a bag of onions or fruit on the hook with a twist tie and add some bait. Crayfish usually let go of bait when they feel themselves leave the bottom, but often get tangled in the netting and can't get away.
Don't transport crayfish from one pond or river to another. Some species are dangerous to the local ecosystems and should only be used for bait in the waters the were caught in.

Ditto on the minnow trap. Used to have good luck in Texas creeks this way. Used bacon, or best, the remains of a fish after I cleaned it. Yes, fish was caught on crawfish.

If you don't care too much about volume, you can cook some chicken necks and tie them to a string and sort of fish for them. If that sounds like too much work, I think you can buy special traps that you bait and leave for a while.

Put a piece of meat, fat or something yucky on a string and put it in front of the crawfish. Once it attracts its attention start pulling it close to you. Then sneak your hand up behind him and grab him on the hard shell behind the claws. He won't be able to get if you do it right. If not it won't hurt for long, I hope.

I use a Minnow trap it has t small holes in the end and I bait it with liver or any other hand meat but liver works great and you also score bonus leetches good luck
